Banana Leche Flan

Banana leche flan is a Filipino dessert with caramel sauce topped up, is made by adding mashed banana to the leche flan mix made out of eggs, evaporated milk and condensed milk. Same texture and color but more siksik, liglig at umaapaw sa vitamins and minerals! Your kids will truly love this yummy treat!

Ingredients

  • For the leche flan:
  • 5 medium sized bananas

  • 5 eggs

  • 1 large can evaporated milk

  • 1/2 cup condensed milk

  • 2 teaspoons vanilla extract

  • For the caramel:
  • 1/2 cup white sugar

  • 3 tablespoons water

Directions

  • For the caramel:
  • Place the sugar and water in a pan. Stir very lightly (do not dissolve).
  • Heat the pan using low heat and wait until the mixture starts to become golden in color.
  • Stir the mixture by gently swirling the pan.
  • When amber in color, turn off the heat and transfer the caramel immediately to the molder and spread.
  • Let it cool for a while and then set aside.
  • For the leche flan:
  • Slice the banana into smaller pieces. Mash the bananas using a fork. Set aside.
  • Crack the eggs in another large bowl. Add the evaporated milk, condensed milk, vanilla extract and the mashed bananas. Blend until well combined. Lightly stir to remove the bubbles.
  • Transfer the mixture to the molder with the caramel. Cover the molder with aluminum foil and steam for 45 minutes up to 1 hour.
  • Do the toothpick test to check if the leche flan is fully cooked up to the core.
  • Loosen the edges using a spatula or a knife and then flip the banana leche flan onto a serving plate.
  • You may eat the banana leche flan right away or chill it for a few hours first. Enjoy!

LECHE FLAN

Leche flan or custard flan was a dish which originated from the Spaniards. The word leche means “milk”. This dessert is primarily made with eggs and super sweet milk. It is yellow in color and are usually served in llaneras. A unique feature of this dish was its caramel sauce made with caramelized sugar which liquifies when the flan is steamed or baked.

In the past, there was only one flavor for leche flan. But today, this dessert emerges and evolves into different flavors like ube, pandan and even strawberry. In this recipe, I will show you how to make banana leche flan.

BANANA LECHE FLAN

We all know that leche flan is the OG pinoy dessert. Among all the fiestas and celebrations, leche flan is always there. But did you know that we can still upgrade this classic pinoy dessert?

I had an extra stock of bananas last week. I usually make them into banana bread but I promised myself this week that I would try something new with bananas. Me and my niece were drinking our banana smoothies which made me really appreciate the banana flavor. The flavor of this fruit is subtle but sweet in a unique kind. My niece actually was requesting to “intensify” the flavor of her banana smoothie because she likes it too much.

I started thinking on desserts which will be more appetizing when given the subtle hint of banana flavor. My first thought was a banana jelly, but I realized that I need to also add something creamy to it. Then the idea of incorporating the banana flavor in our favorite leche flan hit me. My first reaction to the thought was: “Why not???”

I then tried it the following night and it was a success. I really never thought that we can upgrade our favorite leche flan more. If you wanna know how to make your own banana leche flan, read and follow the steps below.

HOW TO COOK BANANA LECHE FLAN

Similar to jelly desserts, flan desserts are the next simplest and easiest dessert recipes to make. The two components for out banana leche flan would be the caramel and the leche flan.

Before making the leche flan, I highly recommend to prepare the caramel first. This can be done by simply heating white sugar with water until caramelized. This step is so quick and you can be done in under 6 minutes. Caramelized sugar easily burns so just remember to always check the mixture as it reaches amber color.

When the caramel is ready, immediately transfer it to the molder. Swirl the molder around so the caramel can spread on all areas. Do not worry if the caramel solidifies, since it will liquify later when steamed.

Now, let’s start with the banana leche flan! Just like any other leche flans, the flan mixture will be milk and egg based. In this recipe, I used evaporated milk and condensed milk with vanilla extract. Simply combine them until you form a nice mixture.

For the fun part, we will incorporate the banana flavor into our flan by slicing them in pieces and then mashing them. Combining the mashed banana with the flan mixture would result to a gritty flan. Mixing them well would still not be enough. In this recipe, I used a hand mixer. You can also do this in a blender. Remember not to overblend to the point that it will be foamy.

Transfer the banana flan mixture to the molder with caramel and the last step to do it to steam it until firm. To check if the banana leche flan was cooked through, do the toothpick test. If the toothpick came out clean, then the banana leche flan is ready to be devoured.

You can eat the banana leche flan while hot or chill it a bit. Yummy!

Banana Leche Flan Recipe (TAGALOG)

Mga Sangkap:

Para sa leche flan:

  • 5 piraso ng saging
  • 5 itlog
  • 1 malakaing lata ng evaporated milk
  • 1/2 tasa ng condensed milk
  • 2 kutsarita ng vanilla extract

Para sa caramel:

  • 1/2 tasa ng asukal na puti
  • 3 kutsara ng tubig

Paano Gawin:

For the caramel:

  1. Ilagay ang asukal sa kawali at lagyan ng tubig. Haluin ng konti (wag tunawin).
  2. Painitin ang kawali gamit ang mahinang apoy at hintayin na maging golden ang kulay nito.
  3. Stir the mixture by gently swirling the pan.
  4. I-swirl ng konti ang pan para mahalo ang caramel.
  5. Kapag amber na ang kulay nito, patayin ang apoy at ilagay kaagad sa molder.
  6. Palamigin ito ng konti at isantabi.

For the leche flan:

  1. Hiwain ang mga saging sa maliliit na piraso. Durugin ang mga ito gamit ang tinidor. Isantabi.
  2. Ilagay ang mga itlog sa malaking bowl at batihin. Sunod na ilagay ang evaporated milk, condensed milk, vanilla extract at durog na saging. I-blend ito gamit ang blender. Haluin ng konti para mawala ang bubbles.
  3. Ibuhos ang mixture sa molder na may caramel. Takpan ito gamit ang aluminum foil at isteam ng 45 minutes hanggang 1 hour.
  4. Gawin ang toothpick test para macheck kung luto ang leche flan hanggang loob.
  5. I-loosen ang edges nito gamit ang spatula o kutsilyo. Baliktarin ito sa serving plate.
  6. Pwede nang kainin ang banana leche flan o palamigin muna ito ng konti. Enjoy!
