This Kimchi Fried Rice recipe is super simple, quick, and Yummy ! One of the easier healthy kimchi meals you can find! Made with some kimchi, water, cubed ham, some day old cold rice, a good amount of gochujang, salt to taste, a bunch of chopped spring onions, mixed in with some sesame oil. Once the kimchi rice is fully coated with a nice shade of red-orange. You can serve this while it’s still warm with a fried egg on top, garnished with some dry seaweeds for more flavor. You can dress it up a bit or keep it simple. You’re sure to enjoy this dish any which way!

Kimchi Fried Rice Recipe :

Ingredients

  • 1 cup kimchi ( chopped )
  • Water
  • 3 pieces ham ( cubed )
  • 4 cups day old rice
  • 2 tablespoons gochujang
  • Salt to taste
  • A bunch of chopped spring onion
  • Sesame oil
  • A fried egg
  • Dry seaweeds for garnishing
  • Oil

Steps:

  1. In a lightly oiled wok, saute kimchi for 5 minutes. Add a bit of water then continue cooking for 3 – 5 minutes. Mix in ham. Then add in day-old rice and gochujang.
  2. Cook until the rice is fully coated with the sauce. Add salt to taste, spring onion, and  sesame oil. Mix well. Take this off the heat.
  3. Top with a fried egg and garnish with seaweeds.

How to make Kimchi Fried Rice ?

To make this vibrant looking fried rice bowl with a nice zing of spice in just 3 steps: fry the kimchi in a lightly oiled wok just to ‘wake’ this up and bring out the flavors. Add a bit of water to avoid the kimchi from burning. Once this starts to simmer, mix in the ham and cook these for a few minutes before adding in the day old rice and gochujang. Why old rice? Freshly cooked rice is too soft and soggy, and might turn mush once cooked again right after. If you do not have day-old rice, you can freeze freshly cooked rice that’s been cooled to room temperature before being placed in an airtight container, then frozen for at least 2 – 3 hours. Once the rice has been fully coated with the sauce, and there’s mostly no white spots left, give this a taste. Add salt if needed and some spring onions, and sesame oil. Mix well and then take this off the heat. Scoop the fried rice into a bowl, top with a fried egg, perfect with a garnish of seaweed flakes.
