Tomato Omelette

This Tomato Omelette is made by removing the core of sliced tomato rings and filling there by a scrumptious mixture made by egg, minced tomato core, minced onion, minced carrot, minced onion, all purpose flour, salt, pepper and frying it like normal omelette. Have some of these small rings of colorful and flavorful egg goodness to make your breakfast fancier than ever! Here’s another way to add veggies to your meals.


Eggs might be considered as one of a Pinoy’s staple foods. You can always find egg trays in everyone’s kitchen. A tray of eggs in our house can only last for a week! There are numerous ways we can enjoy eggs. Eggs are one of the most flexible ingredients in the market. It can be used as a thickener, foaming agent, flavoring, and as a food itself.

A typical Pinoy breakfast includes silog meals. Any ulam plus rice combo becames instantly a better breakfast when egg is added to it. Don’t feel like eating silog? Make some pancakes which are made mostly of eggs. Your sisig missing something? Crack an egg on top. Want some dessert? Eggs make good leche flan. More and more egg recipes are developed everyday.


Eggs are one of my favorite foods. Its flavor is simple and straightforward. What I like about eggs is that it provides comfort and safety. During the times when I don’t feel like eating and just simply want to eat, having a sunny side up egg with ketchup and rice wont fail me. Eggs will save your day even if you don’t have that much of an appetite.

If eating eggs as an ulam, we usually prepare it through frying or boiling. The three most common ways to cook eggs by frying are sunny side up, scrambled eggs, and omelettes.

The sunny side up is easy. When the egg white and yolk are separate and the egg looks like a sun, then it is a sunny side up egg. Sometimes I don’t get it why some people hate the egg whites. It so rich in protein! For people who don’t like egg whites as much as I do, my niece has a hack for you. Scramble the eggs and now there’s no egg whites! Every part is flavorful for you!

Some people are confused with scrambled eggs and omelettes which is why I made this quick subtopic on this article.

Omelettes and scrambled eggs, they are both scrambled before cooking. The only difference would be that scrambled eggs are slightly seasoned with salt and pepper before cooking while omelettes are the fiesta version where you can add any filling you like. The common basic fillings added to an omelette are onions, garlic and tomato bits. What’s good with omelettes is that you can play the fillings you want to add. Some of the fanciest omelettes I have tried have bacon, mushrooms, and cheese in them.

Most omelettes are prepared by adding the fillings into raw scrambled eggs and then throwing them all together in a pan until they come together. But this tomato omelette recipe is not the omelette you’re probably thinking. Aside from adding tomatoes as one of the fillings, tomatoes are also used as and egg shaper. Making tomato omelette is just like making your regular omelette but make it 100x fancy. Aside from preparing the actual omelette, we will be using tomato rings as omelette shapers. You might have seen similar recipes to this online, but using bell peppers. But since tomatoes are much more economical and pairs well with eggs, let’s make tomato omelette!

Let’s start! Get the largest tomatoes you can get. Small tomatoes might give you super cute tomato omelettes so aim for the big ones. We are going to make rings out of these tomatoes–just around 1 cm or half an inch thick.  Separate the core and seeds. In removing the core, you can use a shot glass, a spoon or a knife.

When the tomato rings are ready, let’s make the actual omelette. You can add any fillings you like to your eggs. In this recipe, I used the tomato from the core, minced carrots, chopped sausage (or any cooked meat) and spring onions for a full blast of flavors and colors. Don’t forget to add some flour and season your eggs.

The last step would be putting the tomato rings and omelette together. Lightly oil your pan and then arrange the tomato rings. Fill the rings with the egg mixture you made and just let them cook on their own. You can also add some shredded quickmelt cheese on top!

Serve the tomato omelettes and grab your favorite dip (I recommend mayonnaise for this one!). You can eat it as a snack or pair it with some hot steaming rice. Enjoy!

Tomato Omelette

Course: Breakfast Recipe, Easy Meals




  • 2 large tomatoes

  • 2 medium eggs

  • 2 tablespoons carrot (minced)

  • 2 tablespoons sausage (chopped)

  • 1 tablespoon spring onions (chopped)

  • 1 tablespoon all purpose flour

  • salt and pepper to taste

  • oil for frying


  • Wash the tomatoes and cut them into 1-cm thick rings. Remove the core. Chop the tomato core into tiny bits.
  • Transfer the tomato bits in a large bowl. Add the minced carrots, chopped sausage, spring onions, flour and eggs. Sprinkle some salt and pepper. Mix until well combined.
  • Heat some oil in a pan. Arrange the tomato rings and pour some omelette mixture inside the rings. Cover the pan and let them cook for 3 to 5 minutes using low medium heat.
  • Flip each ring to cook the other side. Cover and cook for another 3 to 5 minutes.
  • Transfer the tomato omelette to a serving plate. Serve them with your favorite dip and a big bowl of hot steaming rice. Enjoy!

Tomato Omelette Recipe (tagalog)


  • 2 malalaking kamatis
  • 2 itlog
  • 2 kutsara ng carrots (hiniwa ng maliliit)
  • 2 kutsara ng sausage (hiniwa ng maliliit)
  • 1 kutsara ng spring onions (hiniwa)
  • 1 kutsara ng harina
  • asin at paminta
  • mantika (pangprito)


  1. Hugasan ang mga kamatis at hiwain ng 1-cm rings. Tanggaling mga gitna at hiwain nang maliliit na piraso.
  2. Ilipat ang hiniwang kamatis sa malaking bowl. Sunod na ilagay ang carrots, sausage, spring onions, harina at mga itlog. Budburan ng asin at paminra. Haluin ng mabuti.
  3. Magpainit ng mantika. Iayos ang mga tomato rings at lagyan ng egg mixture sa loob nito. Takpan ang kawali at hayaan itong maluto ng 3 hanggang 5 minuto gamit ang mababang katamtamang apoy.
  4. Baliktarin ang mga tomato rings para maluto ang kabilang side. Takpan ulit ang kawali at lutuin ng 3 hanggang 5 minuto.
  5. Ilipat ang tomato omelette sa serving plate. Ihain ito kasama ng iyong favorite dip at mainit na kanin. Enjoy!
