GARLICKY GOODNESS

As a Filipino, have you noticed that garlic is always one of the basic aromatics of almost all savoury dishes?

The garlic, or bawang in Tagalog, is a type of bulb which grows underground. It will take around 8 months for the garlic plant to produce a large bulb. Each bulb contains around 8-12 cloves, which can be used in around 5-8 dishes depending on how you love garlic.

Aside from being an aromatic, garlic has a unique pungent and earthy flavor which made it a popular seasoning. Some of the dishes which uses garlic include toasted bread with roasted garlic, creamy garlic fish, chili garlic oil, spaghetti aglia oglio and many more.

GARLIC CHICKEN WINGS

Kids love fried chicken! But kids will love chicken more if you introduce them to different sauces. My niece loves the classic crispy fried chicken but can’t enjoy it well without a dipping sauce like mayo and ketchup. I started introducing different sauces to her and she loved the sweet ones. I saw her once adding fried garlic bits to her mayonnaise and gave me the idea of making a garlic based sauce. This recipe is for the kids (and kids at heart) who loves garlic and bell peppers.

I added a quick hack in the preparation part on how to make the chicken wings extra kid-friendly. If you wanna know how to make garlic chicken wings, read and follow the quick steps below. Happy cooking!

HOW TO MAKE GARLIC CHICKEN WINGS

Making some garlic chicken wings is super easy. If you have tried frying chicken wings in the past, then the following steps would be familiar to you.

Let’s start with the chicken wings. Since this recipe is for children, we are going to cut the chicken wings into thinner pieces. For this version, I only used the wingette part. You can make this recipe in two parts, where you serve the wingettes to the children and the drumettes to the adults. Based on my experience, kids prefer the wingette part since there is no dry part, such as the pitso part attached to the drumette.

After you wash and prepare the wingette, try to feel the two bones. This is where you will cut the chicken. Remember to use a sharp knife when doing this to avoid injuries. After you cut them all, you can now continue cooking this like a regular chicken wing. Lightly season them with salt to draw out some water and to make them crispy for later. Then, marinate them in your preferred seasonings. For this version, I used soy sauce, oyster sauce and liquid seasoning. The chicken marinades faster than other meats, so you can just leave it for 15 minutes and it is now ready to cook.

Fry them directly into hot oil until brown and crispy. You can also opt to coat them with breadcrumbs and egg if you like. You may double fry them to make sure that they are extra crispy.

Our sauce is actually more of a garlic-infused oil compared to the usual thick sauces. Alternatively, you can also use butter instead of oil. Saute as much garlic as you want then add spring onions. To give the sauce an extra crunch and freshness, I added some finely chopped red and green bell peppers. Toss gently and it is now ready to be devoured! Yum!

I usually go beside the kids and make papak of the chicken. I sometimes make an adult version of this dish using the drumettes, and enjoy it with hot steaming rice. Since the hack of slicing the chicken wings smaller makes this dish more, you can also have this as a pulutan!  Yum!

COOKING TIPS

  • You can make this dish spicy by adding a little chili powder or chili flakes.
  • You can heighten the flavor of the bell peppers by adding some paprika powder.
  • You may also sprinkle some fried garlic bits if you like.
