This is usually a concoction of Sichuan peppercorn, red pepper, ginger, toasted sesame seeds, spices like black pepper, star anise, bay leaves, cumin seeds, fennel seeds, and cloves. The spices are cooked over a pot to bring out the flavor and aroma, mixed and crushed or grinded together, hot oil will then be poured over the spices, which bubbles and cooks the spices, cooled to room temperature, placed in an air tight container and kept in the fridge overnight or for a few days to further ‘marinade’ and strengthen it’s flavor. Chili oil is used as a dip for wontons, dumplings, or scallion pancakes, topped on congee or rice, or anywhere you’d like to add a little kick in!
