Ingredients

  • 3 pieces chicken breasts
  • 1 large onion ( chopped )
  • 1 clove garlic ( minced )
  • 4 ribs celery ( chopped )
  • 1 carrot ( chopped )
  • 2 pieces bay leaves
  • 1 teaspoon fresh thyme
  • 6 cups chicken broth
  • 2 cups egg noodles
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon fresh parsley
  • 1 – 2 tablespoons oil

Steps:

  1. In a pan, add enough oil, cook the chicken till both sides have seared. Set aside.
  2. With the remaining oil, cook onions till translucent, garlic until aromatic, then add celery, carrots, bay leaves, thyme, broth, and the seared chicken. Cover and cook for 25 – 30 minutes.
  3. Take out the chicken and shred into small pieces, discard the bones. Place back the chicken meat into the pot with some dry egg noodles, salt, pepper, and parsley. Mix well.
  4. Cover and cook till the noodles are tender. Turn off the heat and transfer this into a bowl. Serve hot and enjoy !
