Cheesy Ube Palitaw Rolls

Cheesy Ube Palitaw Rolls are a modern take of the chewy simmered flattened rice cake-balls. In this version the balls take a form or a log made of glutinous rice flour and water, some flavored with ube flavoring before being filled with cheese, then simmered and cooked before being coated with grated coconut, crushed sesame seeds, and sugar. Cheesy Ube Palitaw Rolls Recipe :

Ingredients

  • ½ cup sesame seeds
  • ½ cup sugar
  • 2 cups glutinous rice flour
  • 1 cup water
  • 1 tablespoon ube flavoring
  • cheese
  • 1 cup grated coconut

Steps:

  1. Place sesame seeds in a pan at low heat. Toss continuously to toast these until they turn golden. Ground and let these cool down before mixing the seeds with sugar. Set aside.
  2. In another bowl, mix together glutinous rice flour and water. Add the water a little at a time while mixing. Knead till it forms a smooth dough.
  3. Divide the dough in half and mix the other with ube flavoring. Scoop one white and purple dough and form this into a ball separately. Then combine these together, flatten, add cheese in the middle and cover it up with the dough.
  4. Place these on a plate dusted with glutinous rice flour. Repeat till all of the dough is done. Drop these in boiling water, let it cook until it floats to the top. 
  5. Take these out and coat with grated coconut. Place on a serving plate before being sprinkled with the sesame sugar. Optional; wrap the middle of each palitaw with a banana leaf.

What is Palitaw?

Palitaw comes from the Tagalog word “Litaw” which means “to float” thus the method of cooking this flattened rice cake. A Filipino snack that used to be made from soaked malagkit or sticky rice that’s been mashed into a dough, then squeezed out of the excess water. Compared to the now easily found and less time consuming glutinous rice flour and water. Formed into a ball then flatted to be cooked in boiling water till it floats to the top. These are typically coated integrated coconut with a side of toasted sesame seeds mixed with sugar on the side. Though some versions already have the sesame and sugar mixed with the grated coconut and dusted all of the palitaw.

How to make these Easy Cheesy Ube Palitaw Rolls ?

A Pang-negosyo gluten free idea that’s easy to make and easily customizable, adding in nuts or other fillings like peanut butter or chocolate,  or to make this as an afternoon snack-merienda, some even eat these as a dessert. This traditional FIlipino snack is surely worth a try!

Here are the Cheesy Ube Palitaw Rolls ingredients and steps: First prepare the topping, one being white sesame seeds, toasted in a pan at low heat for a bit of time, tossing these around continuously to cook evenly, once golden, place these in a mortar to be slightly crushed with a pestle. Let this cool down a bit before mixing together with some white sugar. If these are too hot these will melt the sugar and might make them stick together which you don’t want for this dish. Set this aside together with some coconut shavings on the side.

For the Palitaw; mix together glutinous rice flour and a bit of water at a time. Mix or knead till you get a nice smooth dough. Split this in half and mix the other half with ube flavoring to make a nice purple color with a slight ube taste. Scoop one each of the dough and roll separately into balls, then stick these together and roll to combine, flatten and place a stick of cheese in the middle, roll again till the cheese is covered and you form a log. Repeat til all the dough is done, and place these on top of a plate dusted with glutinous flour. This helps keep the palitaws from sticking to one another or to the plate. Place the palitaw in a pot of boiling water one by one. Cook these till it floats to the top. Once floating, take these out and coat immediately with grated coconut then place these on a serving plate or container if you’re planning to sell them, sprinkling some sesame sugar on top before serving. For Those planning to make this into a small business, wrap each palitaw with a thin banana leaf strip or line the container with a banana leaf to make these look more appealing.

Mga Sangkap :
