Cheesy Tuna Dynamite
Tuna dynamite is a Filipino crispy spring roll made with a lumpia wrapper and have a filling, made with green chilies, canned tuna and corn-starch. Here we have a dip made with ketchup and mayonnaise to enjoy this spicy appetizer spring roll. This cheesy tuna dynamite gives you a flavor bomb in your mouth, perfect for impressing your friends or treating yourself to a delightful snack. Yum!
Cheesy Tuna Dynamite Recipe
Ingredients:
- long green chilies (whole)
- 2 cans corned tuna
- water
- cornstarch
- lumpia wrappers
- oil (for deep frying)
For the dipping sauce:
- ketchup
- mayonnaise
Directions:
- Wash and prepare the long green chilies. Make a long slit from top to bottom to open the chilies. Remove the seeds using a spoon. Be careful not to accidentally slice the stem. Then, soak them in water for minimum 10 minutes to reduce spiciness.
- Prepare the cans of corned tuna. Place them in a bowl and set aside.
- Prepare the cheese and slice them into long thick strips.
- On a small bowl, combine water and cornstarch to make a mixture to seal the wrappers for later. Make sure that there is no lumps.
- Gently open the green chilies and add some corned tuna and a strip of cheese.
- Separate the lumpia wrappers from one another. Wrap each stuffed chili just like a regular lumpia. Use the cornstarch mixture to seal the ends of the wrapper. Do these steps with the rest of the ingredients.
- Heat a lot of oil in a pan using medium heat. Fry the dynamites for a few minutes. Flip to cook the other side. Once all sides are golden brown and crispy, transfer them to a paper towel or strainer to drain excess oil. Do these with the rest of the dynamites.
- To make the dipping sauce, combine equal parts of mayonnaise and ketchup in a small bowl.

As a tita, I have been learning all these Gen Z slangs lately. One occasion which tested the tita in me is when my niece requested for a “bomb snack” since some of her friends will come over to our house that afternoon. Not knowing what that really means, the first food which came into my mind was the dynamite. BOOM! What could bomb snacks mean, right?
I served the dynamite filled with tuna instead of the usual pork giniling since one of her friends is a Muslim. I was genuinely bragging this dynamite to my niece, where she laughs at me, telling that I might have taken the “bomb snack” too literally. By bomb snack, she only meant a “nice and tasty snack”. Kids these days!! After eating the cheesy tuna dynamite, my niece told me that my dynamite was still the “OG” bomb snack she ever tasted.

How to Cook Cheesy Tuna Dynamite
Preparing these Cheesy Tuna Dynamites is as delightful as any other lumpia. If you have tried making lumpia in the past, then this recipe will be super easy for you.
For us Filipinos, wrapping lumpia is a skill. But unlike other lumpia wherein you just need to lay the filling straight to the wrapper before rolling it, this dynamite recipe contains additional steps for additional fun and thrill.
To start, gently wash and ready the long green chilies, crafting a lengthwise slit from top to bottom. Carefully remove the seeds using a spoon. During this delicate step, make sure that the stem remains intact.
To keep the spicyness at the fun level, soaking the green chilies in a bowl of water will help tame the spiciness. While they soak, attend to the corned tuna, placing the contents of the cans in a bowl and setting it aside. Equally important, the cheese—transformed into long, thick strips. I used the origibal Eden cheese for this recipe. Feel free to use different types of cheese for different textures and feeling.
In a small bowl, dissolve cornstarch in water. This will be used to seal the lumpia wrappers for later. Now, gently unfold the green chilies and generously fill them with the savory corned tuna and the cheese strips. With the length of my green chilies, I was able to add 2 cheese strips. I only used plain corned tuna and cheese strips for this recipe to keep it simple and budget friendly, but you can always add some other minced veggies, herbs and spices to elevate the taste of the filling. Lay the lumpia wrappers in a flat surface, place the stuffed green chilies, wrap, roll, and then seal the ends.
The last step would always be theost exciting part. Deep fry the wrapped dynamite until golden brown and crispy. Transfer them to a paper towel to drain the excess oil to avoid them from being soggy.
A dipping sauce would surely complete this deep fried crispy dish. A simple yet satisfying dipping sauce would be the classic ketchup and mayo combination. If you want to reminisce your childhood street days, you can always have the dynamite with fishball sauce or with special suka. Yum!
Paano Magluto ng Cheesy Tuna Dynamite
Mga Sangkap:
- siling haba
- 2 latang corned tuna
- tubig
- cornstarch
- lumpia wrappers
- mantika (pang prito)
- Para sa sawsawan:
- ketchup
- mayonnaise
Paano Lutuin:
1. Hugasan at ihanda ang mga siling haba. Hiwaan ang mga ito sa gilid para mascoop ang mga buto gamit ang kutsara. Iwan ang tangkay. Ibabad sa tubig ang mga ito para mabawasan ang anghang.
2. Ilagay ang corned tuna sa isang bowl. Isantabi.
3. Hiwain ang cheese ng makakapal na strips.
4. Sa isang maliit na bowl, paghaluin ang tubig at cornstarch. Gagamitin itong pangseal ng mga lumpia wrapper.
5. Buksan ang mga hiwa ng siling haba at lagyan ng corned tuna at cheese strips.
6. Paghiwahiwalayin ang mga lumpia wrapper. Iroll at wrap ang bawat dynamite tulad ng ginagawa sa ibang lumpia. Gamitin ang cornstarch mixture para mai-seal ang mga sides ng wrapper. Gawin ang mga steps na ito sa iba pang ingredients.
7. Magpainit ng maraming mantika sa kawali gamit ang katamtamang init. Iprito ang mga dynamites ng ilang minuto. Baligtarin para maluto ang kabilang side. Kapag golden brown at crispy na ang lahat ng sides, ilipat ang mga ito sa isang paper towel o strainer para tumulo ang sobrang mantika. Gawin ang mga steps na ito sa natitirang dynamites.
8. Para sa sawsawan, paghaluin ang mayonnaise at ketchup sa isang maliit na bowl.
9. Enjoyin ang cheesy tuna dynamite kasama ng ginawa nating dipping sauce. Kainin ito habang mainit pa at crispy! Yum!
