This Chicken Leg Quarter Hamonado Filipino style is made with just a minimal amount of ingredients, chicken seared then sautéed with garlic and onions, then basted in a savory marinade made of soy sauce, pineapple juice, sugar, black pepper. Simmered and cooked till golden brown and delicious!

Chicken Leg Quarter Hamonado Recipe :

Ingredients

  • 3 chicken leg quarters
  • Oil for searing
  • 4 cloves garlic, minced
  • 1 medium onion, minced
  • ½ teaspoon black pepper
  • ¼ cup soy sauce
  • 1 can pineapple juice
  • 1 can pineapple slices
  • 3 tablespoons sugar

Steps:

  1. To prepare the chicken; shallowly slit the chicken (skin up) to help the flavors go through the bones. Set aside.
  2. Heat oil in a pan, sear the chicken legs, flip till both sides have browned. Take these out.
  3. Saute the garlic with the leftover oil, cook the onion till slightly translucent before adding back the chicken legs. Mix in black pepper, soy sauce, pineapple juice and the juice from the pineapple slices. Cover and let this simmer for 5 minutes.
  4. Uncover and flip to cook evenly. Sprinkle in some sugar, giving it a good mix before letting it simmer for another 5 minutes, covered.
  5. Flip again, give it a taste before adding more salt as needed. Baste occasionally. Add in the pineapple slices and baste till the chicken looks golden brown.
  6. Simmer for another 2 – 3 minutes before serving.

Mga Sangkap :

  • 3 manok, leg quarters
  • Mantika pang luto
  • 4 butil ng bawang, tinadtad
  • 1 sibuyas, tinadtad

  4. Alisin ang takip at ibaliktad ang mga manok para pantay ang pagluto. Haluan ng asukal at pakuluin ng 5 minuto na nakatakip.
  5. Baliktarin ang mga manok, tikman at lagyan ng asin kung kinakailangan. Ibaste at lagyan ng mga hiwang pinya. Lutuin hanggang maggolden-brown ang mga manok.
  6. Bakuluin ng 2 – 3 minuto bago ihanda.
