Special Binagoongan Baboy

Special Binagoongan Baboy or Pork Binagoongan, is a dish that’s packed full of flavor even when it’s just made of a few ingredients. Just prepare some pork belly, eggplants, onion, garlic, tomatoes, shrimp paste, and an optional chili for a bit of spice. You just need to saute the aromatics, cook the pork until it changes in color, then simmer with the other ingredients until the pork feels tender and you’re good to go. A great dish to make for a quick lunch or dinner, leaving it to simmer while you prepare for the day, coming back when it’s ready to be served and paired with freshly cooked rice.

Special Binagoongan Baboy Recipe :

Ingredients

  • ½ kilo pork ( chopped )
  • 1 piece eggplant ( sliced )
  • 1 onion ( minced )
  • 2 piece tomatoes ( chopped )
  • 2 cloves garlic ( minced )
  • 3 tablespoons shrimp paste
  • ½ cup water
  • Salt and pepper to taste
  • 1 long chili ( sliced )
  • Oil

Steps:

  1. In a pan with some oil, ‘fry’ eggplants until both sides are golden. Remove and set aside. In the same pan, saute onions before adding in the tomatoes.
  2. Saute tomatoes until soft and easy to crush. Add in garlic, saute until aromatic before adding in the pork. Cook for 3 to 5 minutes until it changes in color.
  3. Add in shrimp paste and water. Mix well, cover and simmer for 30 to 40 minutes. Add salt and pepper to taste. Add long chilies for spice.
  4. Serve with the fried eggplant on the side.

How to make this Special Binagoongan Baboy

“Binagoongan Baboy” or “Pork binagoongan” in English translates into “Pork stewed or sauteed in Shrimp Paste”. This Special version of the Pork Binagoongan with Talong (Eggplant) is made simple and more savory with the addition of tomatoes giving it a nice depth of flavor.

Starting with frying the sliced eggplants. Cook and flip the eggplants until golden, then set these aside on a kitchen towel or strainer to help remove any of the excess oil. In the same pan, cook the minced onions until a bit soft, then add in the sliced tomatoes, sauteing until the tomatoes are soft enough to crush. After these have softened, add in the garlic and cook until aromatic before adding in the chopped pork belly. Usually the dish uses the pork belly part since this is the juiciest and the most versatile part of the pig, this is also usually the most affordable cut. Cook the pork belly chunks until these have changed in color. Then mix in the main flavoring of the dish, shrimp paste, with some water to help simmer the pork until it turns tender. It might take 10 minutes more or less. This depends on how big the pork chunks are chopped. The smaller these are, the faster they will be cooked. You’ll know if these are tender enough if you can easily pierce this with a fork. After it’s been simmered until tender, add in some sliced chillies. Mix for a minute or so before serving these over rice with a side of fried eggplants.

  • Binagoongan Fried Rice – Simply add 1& ½ or 2 cups of cold or overnight white rice into the recipe at the end and cook until these are fully coated. You can also choose to just use the sauce or replace the meats with the ground version or smaller bits to make it a quick rice dish.
  • You can also choose to use other meats like beef, chicken for Binagaoongan chicken, steak cut or thicker cut fishes ( descaled and cleaned), other seafoods like shrimps or squids.

Paano Lutuin :

  1. Sa kawali na may mantika, ‘iprito’ ang mga talong hanggang mag golden at bawat gilid. Tanggalin at itabi. Sa parehong kawali, lutuin ang mga sibuyas ng konti bago haluan ng mga kamatis.
  2. Lutuin ang mga kamatis hanggang malambot at mabilis itong durugin. Ihalo ang mga bawang hanggang bumango bago ilagay ang mga baboy. Lutuin ng 3 – 5 minuto o hanggang mag iba ng kulay.
  3. Haluan ng bagoóng alámang at tubig. Takpan ang pakuluan ng 30 – 40 minuto. Haluan ng asin at paminta panlasa. Ihalo ito ng mga sili para umanghang.
  4. Ihanda kasama ng pritong talong sa tabi.
