Ube Cookie Recipe
This Ube Cookie recipe makes for a delightfully vibrant and delicately sweet dessert that’ll make your afternoons a whole lot more delightful. A beautifully delicious purple colored cookie that just needs 5 steps to make. Using a few ingredients – all purpose flour, baking powder, baking soda, salt, white sugar, brown sugar, unsalted butter, ube halaya or jam, ube extract, a large egg, and a good amount of chocolate. All the ingredients are mixed together, molded, then baked into a gooey chewy cookie with a slightly crisp outer layer.

Ingredients :
- 1 & ⅓ cup all purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- ⅓ cup white sugar
- ½ or ⅓ cup brown sugar
- ½ cup unsalted butter
- ½ cup ube halaya or jam
- 1 tablespoon ube extract
- 1 large egg
- ⅔ or 1 cup chocolate
Steps :
1. In a bowl, sift in the flour, baking powder, baking soda, and salt. Mix well and set aside.
2. In another bowl, mix white sugar, brown sugar, and butter. Add in the ube halaya or jam and ube extract. Mix until it looks smooth enough.
3. Mix in a large egg before folding in the flour mixture until there are no white streaks left. Fold in the chocolate chips. Cover and place in the freezer for 1 hour.
4. For medium sized cookies-use a ⅓ cup or scoop. For smaller cookies use a ⅛ – ¼ cup or scoop. Place on parchment or cling wrap. Freeze for another 1 – 2 hours if these feel too soft.
5. To bake, roll into a ball using your hands ( optional ). Add more chocolate if you’d like. Press down before baking in a 350°F or 160°C preheated oven for 10 – 12 minutes. For bigger cookies, bake for 12 – 15 minutes.
6. Enjoy warm or cooled !

Cream until the butter looks fluffy and lighter in color before adding in the ube halaya or jam. While the halaya is usually more affordable and gives you a better vibrant purple color. Ube Cookies Resipi ( Tagalog ) :
Mga Sangkap :
- 1 at ⅓ tasa ng harina
- ½ kutsarita ng baking powder
- ½ kutsarita ng baking soda
- 1 kutsarita ng asin
- ⅓ tasa ng puting asukal
- ½ o ⅓ tasa ng kayumangging asukal
- ½ tasa ng mantikilya ( na unsalted )
- ½ tasa ube halaya o jam
- 1 kutsarang ube extract
- 1 malaking itlog
- ⅔ o 1 tasa ng tsokolate
Paano Lutuin :
- Sa mangkok, salain ang harina, bakinh powder, baking soda, at asin. Haluin at itabi.
- Sa ibang mangkok, haluin ang puting asukal, kayumangging asukal, at mantikilya. Pagkatapos, haluin ang ube halaya o jam at ube extract. Haluin ng mabuti.
- Haluan ng itlog bago ifold ang harina na mixture hanggang wala nang makitang mga puting guhit. Ifold ang tsokolate. Takpan at ilagay sa red ng 1 oras.
- Para sa katamtamang laking cookies gumamit ng ⅓ na tasa o scoop. Para sa maliliit na cookies gumamit ng ⅛ o ¼ na tasa o scoop. Ilagay sa cling wrap o parchment at palamigin nang 1 – 2 oras kung masyado itlong malambot.
- Para ihurno, irolyo ang mga bola sa kamay ( opsyonal ). Dagdagan ng tsokolate kung gusto. Pindutin pababa at lutuin ng 350°F o 160°C na ininit na oben ng 10 – 12 minuto. Para sa malaking cookies, lutuin ng 12 – 15 minuto.

- Depende sa biniling uba halaya o jam, dagdagan o bawasan ang gagamiting kayumangging asukal.
- Kaya pinapalamig ang ‘masa’ ay para mabilis itong imold mamaya. Ifreeze ang mga ito ng 1 – 2 na oras kung masyadong malambot.
