Sweet and Spicy Eggplant

Sweet and Spicy Eggplant is a very savory dish made by sauteing eggplants, onions, garlic, oyster sauce, soy sauce, sugar, ketchup, black pepper, some red chillies, and green onions as a final touch. This eggplant dish is great as a side dish or a main dish to be topped over rice or noodles. Quick and simple but absolutely flavorful, this dish will surely awaken your senses, especially if you decide to add a bit more chili into it.

Sweet and Spicy Eggplant Recipe :

Ingredients

  • ½ kilo eggplant ( sliced  2 inches long )
  • 1 medium onion ( minced )
  • 4 cloves garlic ( minced )
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 & ½ tablespoons sugar
  • 2 tablespoons ketchup
  • Black pepper to taste
  • Red chillies
  • Oil for frying
  • Green onions for garnish ( optional )

Steps:

  1. Heat some oil in a pan, place in the eggplants, fry and flip until golden brown. Cook these in batches. Set aside.
  2. Remove some of the oil and saute onions till soft, then garlic till aromatic. Mix in oyster sauce, soy sauce, sugar, ketchup, and black pepper to taste. Add red chillies for some spice.
  3. Once the sauce thickens, add back the eggplants and mix till everything is coated in the sauce. Garnish with some green onions before serving.
