Eggplant Patties

Eggplant patties is yummy patties made by eggs and eggplant along with onion, garlic, all purpose flour, salt and pepper. This veggie patties is popular in Philippines and has a crispy exterior and soft, flavorful interior, which can be enjoyed as a delightful appetizer or a satisfying vegetarian main course. The eggplants are first prepared by either boiling or grilling them until tender, then peeled and combined with a mixture of eggs, onions, garlic, all-purpose flour, salt and pepper.

Eggplant Patties Recipe

Ingredients:

  • 3 – 4 large eggplants
  • 1 medium onion (minced)
  • 3 cloves of garlic (minced)
  • 1/4 cup all purpose flour
  • 2 large eggs
  • salt and pepper to taste
  • oil (for frying)

Directions:

  1. Wash and prepare the eggplants. You may either boil or grill to cook them. Transfer them to a separate plate and set aside to cool a bit. Once cool, peel the skin off gently using your hands.
  2. Slice the eggplants to look for dark seeds. If none, chop the eggplants into small pieces. Then, transfer to a large bowl.
  3. Add the large eggs, minced onions, garlic, and all purpose flour. Sprinkle some salt and pepper. Mix until well combined.
  4. Heat some oil in a flat pan using medium heat. Add a scoop of the eggplant mixture and let cook for a few minutes. Flip to cook the other side. Once both sides are golden brown and crispy, transfer them to a strainer or paper towel to drain excess oil. Do these steps to all the eggplant mixture.
  5. Transfer the eggplant patties to a serving plate. Serve this together with your favorite ketchup or dipping sauce. Make papak or have this with some hot steaming  rice. Yum!

Some common Pinoy dishes which uses eggplants include tortang talong, ensaladang talong, pinakbet, adobong talong and kare-kare.

Patty is a dish which is very flexible on the ingredients you add. Most burger patties uses beef or pork as  a base. To make it healthier, we can do a veggie mixture and turn them into a patty. Veggie patties works best if you put them inside small buns or partner them with some rice. In this recipe, the budget friendly eggplants will be used as a base. How to Cook Eggplant Patties

Making some eggplant patties is super easy and simple. If you have tried any fried patties in the past, then this recipe will be easy for you.

Let’s start this dish by preparing the eggplants. For this recipe, you can use any variety of eggplant you like. I used the long purple ones for this one. Two ways you can cook the eggplants are either to boil of grill them. To make things easier and less messy, I chose to boil my eggplants. Since it is hard to know if the eggplants are already cooked, just use the color of the skin to determine if they are ready. Once the eggplant skin are brown in color, they are ready to use.

The next step is to remove the skins of the eggplant. You can wait for it to cool down a little or do this little hack I do. The hack is everytime you remove hot skin, you dip your fingers in cold water so you won’t burn. Once skinless, chop the eggplant into small pieces. The mashed eggplants would be the base of our veggie patties. Add the rest of the ingredients. In this recipe, I used onion and garlic but you can add other veggies of choice, just make sure to chop them finely before adding into the mixture.

Once the mixture is ready, time for cooking! Make the patties similar in size by using a measuring cup. Just a bit bowl of eggplant mixture can yield to more than 10 patties! An alternative way of cooking the patties which uses less oil would be pouring them into muffin cups and then bake them for a few minutes.

The fried patties will surely have excess dripping oils so make sure to transfer them to a paper towel first before onto a serving plate. I love my eggplant patties just how I like my hamburger patties! Enjoy it with rice or with some hot buns. Don’t forget your sauce! Yum!

Eggplant Patties Recipe in Tagalog

Mga Sangkap:

  • 3 – 4 malalaking talong
  • 1 sibuyas (hiniwa)
  • 3 butil ng bawang (hiniwa)
  • 1/4 tasang harina
  • 2 malalaking itlog
  • asin at paminta
  • mantika (pang-prito)

Paano Lutuin:

  1. Hugasan at ihanda ang mga talong. Pwede mo itong pakuluan o ihawin para maluto. Ilipat ang mga talong sa lalagyan at hayaang lumamig ng kaunti. Kapag malamig na, dahan dahang tanggalin ang mga balat nito gamit ang mga kamay.
  2. Hiwain ang mga talong para makita kung mayroong maitim na buto. Kung wala, hiwain ang mga talong nang maliit na piraso. Ilipat ang mga ito sa isang malaking bowl.
  3. Sunod na ilagay ang mga itlog, hiniwang sibuyas, bawang, at harina. Timplahan ng kaunting asin at paminta. Haluin ng mabuti.
  4. Magpainit ng mantika sa flat na kawali gamit ang katamtamang apoy. Maglagay ng isang scoop ng talong mixture at hayaang maluto ng ilang minuto. Baliktarin ang mga ito para maluto ang kabilang side. Kapag golden brown at crispy na, ilipat ang mga ito sa strainer o paper towel para tumulo ang sobrang mantika. Gawin ang mga steps na ito hanggang maubos ang mixture.
  5. Ilipat ang mga eggplant patties sa serving plate. Ihain ito kasama ang iyong paboritong ketchup o sawsawan. Pwede itong papakin o kainin kasama ang mainit na kanin. Yum!
