Sinarsahang Pork Ribs Recipe

Ingredients:

  • 1 kilo pork ribs (sliced into serving pieces)
  • 5 cloves of garlic (chopped)
  • 1 medium onion (chopped)
  • 2 tablespoons tomato paste
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 250mL Sprite (or 7up)
  • 1/2 teaspoon black pepper powder
  • 1/2 cup green peas (cooked)
  • red and green bell peppers (chopped)
  • 2 to 3 cups of water

Directions:

  1. Wash and prepare the pork spare ribs.
  2. Prepare a pot of water and bring it to a boil. Once boiling, add the pork spare ribs. Parboil them for just 10 minutes to remove impurities. Place the spare ribs on a plate and discard the liquid.
  3. Heat some oil in another pan. Add the spare ribs and saute for a few minutes until brown.
  4. Add the chopped garlic and onion and saute them together with the spare ribs. You may add a little extra oil if needed.
  5. Make a hole at the center of the pan. Add the tomato paste and saute for a whole minute. Then, saute them together with the spare ribs and season with some black pepper powder.
  6. Pour the Sprite, soy sauce and oyster sauce. Mix well and then add 2 to 3 cups of water.  Cover the pot and let it simmer using medium heat until the meat is tender. If the meat is not yet tender, add more water and continue cooking as needed.
  7. Lastly, add the cooked green peas and sliced bell peppers. Toss for a few minutes. Once the ingredients come together, the dish is ready!
  8. Transfer the sinarsahang pork spare ribs to a serving plate. Enjoy this with a big bowl of hot steaming rice. Yum!

Preparing some sinarsahang pork spare ribs is super easy and straightforward. If you love saucy dishes, then this one is the perfect dish for you.

The first step in cooking this dish is preparing the ingredients. Our goal is to make the meat and the sauce complementary. So for this saucy recipe, pork spare ribs would be the perfect type of meat to use.  Spare ribs are very bony which will ensure that our thick savoury sauce will stick and sip in for later. Slice your spare ribs into serving portions.

Before the actual cooking, parboiling the spare ribs is an important step. This is done to remove the impurities, which you can see as the white foam which will rise to the top after 10 minutes of cooking. This white foam is not actually dirty, but it is the excess fat from the spare ribs. Not doing this step can affect the taste of the sauce for later as it can add a little “latak” after taste.

The next step would be sauteing the spare ribs in the aromatics. Then, the base we will use for this dish is the tomato paste. If you want a less sour sauce, you can use tomato sauce instead. The soy sauce and oyster sauce are then added to compliment the sourness of the tomato paste while the Sprite (or any lemon soda) is added to have a hint of fruity sweetness.

Once you are okay with the sauce, the next step is making sure that the meat is tender. Add enough water to cook the meat. Then, do a taste test and adjust the taste according to your preference. You can incorporate some fresh herbs and extra spices depending on your liking.

The last step would be adding the remaining ingredients which are the green peas and bell peppers. You can add other ingredients which you think will be a great match to the sauce.

Paano magluto ng Sinarsahang Pork Ribs

Mga Sangkap:

  • 1 kilo pork ribs (hiniwa sa serving pieces)
  • 5 butil ng bawang (hiniwa)
  • 1 sibuyas  (hiniwa)
  • 2 kutsarang tomato paste
  • 3 kutsarang toyo
  • 2 kutsarang oyster sauce
  • 250mL Sprite (o 7up)
  • 1/2 kutsaritang paminta
  • 1/2 tasang green peas (luto na)
  • red at green bell peppers (hiniwa)
  • 2 – 3 tasang tubig

Paano Lutuin:

1. Hugasan at ihanda ang spare ribs.

2. Magpakulo ng tubig sa kawali at ilagay ang spare ribs. Pakuluan ang mga ito ng 10 minuto para lumabas ang impurities. Kapag lumabas na ang white foam, alisin ang mga karne sa kawali at ilipat sa lalagyan. Itapon ang pinagpakuluan.

3. Magpainit ng mantika sa isa pang kawali. Ilagay ang mga spare ribs at lutuin hanggang maging brown. 

4. Ilagay ang sibuyas at bawang at igisa kasama ng spare ribs. Dagdagan ng konting mantika kung kailangan. 

5. Gumawa ng space sa gitna ng kawali. Ilagay ang tomato paste at igisa ng isang minuto. Saka ito igisa kasama ng spare ribs. Timplahan ito ng konting paminta. .

6. Sunod na ilagay ang Sprite, toyo at oyster sauce. Haluin ng mabuti. Maglagay ng 2 hanggang 3 tasa ng tubig para maluto ang karne. Takpan ang kawali at hayaan itong maluto gamit ang katamtamang apoy. Kapag matigas pa rin ang karne, dagdagan ang tubig at lutuin pa ito ng ilang minuto.

7. Huling ilagay ang green peas at ang mga hiniwang bell pepper. Haluin hanggang malagyan lahat ng sauce. Kapag luto na, ready na ito!

8. Ilipat ang sinarsahang pork spare ribs sa serving plate. Ihain ito kasama ng malaking bowl ng mainit nankanin. Yum!
