Buffalo Chicken Wings Recipe Filipino Style
Buffalo Chicken Wings is made by marinating chicken wings with salt, pepper and calamansi juice, then dredging this in a dry mix made with all purpose flour, corn starch, pepper, garlic powder, paprika and frying in oil. It is then added to a hot buffalo sauce made by butter, garlic, hot sauce, ketchup, brown sugar and soy sauce and cooked further to make tasty buffalo wings. With its savory and spicy taste, this buffalo wings recipe would surely satisfy!
Buffalo Chicken Wings
Ingredients
- 1 kg. chicken wings
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp. calamansi juice or lemon juice
BREADING
- 1/2 cup all purpose flour
- 1/2 cup cornstarch
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp garlic powder
- 1 tsp. paprika
- 1/2 tsp. baking powder
SAUCE
- 3 tbsp. butter unsalted
- 3 cloves garlic minced
- 1/4 cup hot sauce adjust as needed
- 1/4 cup ketchup
- 1 tbsp brown sugar optional
- 1 tbsp. soy sauce optional
Instructions
- Cut the joint between the drumette and wingette. Remove the tip (reserve for making chicken stock). Pat dry. Add salt, ground black pepper and calamansi juice. Mix well. Marinate for at least 1 hour.
- Combine all the breading ingredient. Coat each wing with breading. Shake off excess.
- Heat oil. Fry the breaded chicken wings in batches. do not overcrowd the pan to maintain the temperature of the oil for crispy chicken wings. Fry for 10 to 12 minutes (light brown).
- After 10 minutes, remove from oil. Let it sit for at least 15 minutes. Double-fry to make it even more crisp. Set the heat to high. Then put the chicken back to the oil and fry until crispy and golden brown. Set aside while making the sauce.
- For the sauce: Melt butter and saute’ garlic. Then add ketchup, hot sauce, sugar and soy sauce. Mix well and cook until thick. Then toss the fried chicken wings until well coated.

Buffalo Chicken Wings Ingredients

RECIPE NOTES
- Adjust the amount of hot sauce depending on how hot or spicy you want your buffalo chicken wings would be.
- To keep the chicken wings crunchy, add the sauce when it cooled down a little and just toss the fried chicken with it to coat.
- I want a little bit of sweetness in my buffalo chicken wings, making it a little bit of savory and sweet. You may omit sugar if you want to keep on the savory side.
- In this recipe, I used banana ketchup (soooo Filipino, right?), but you can use any ketchup available, be it tomato or banana ketchup.
- You can also top this with chopped parsley or sesame seeds.

Ingredients :
- 1 kilo ng pakpak ng manok
- 1 kutsarita ng asin
- 1 kutsarita ng paminta
- 1 kutsara ng calamansi juice (o limon juice)
Para sa Breading
- 1/2 tasa harina
- 1/2 tasa cornstarch
- 1 kutsarita ng asin
- 1 kutsarita ng paminta
- 1 kutsarita ng garlic powder
- 1 kutsarita ng paprika
- 1/2 kutsarita ng baking powder
Para sa Sarsa
- 3 kutsarang mantikilya ( walang asin )
- 3 butil ng bawang ( tinadtad )
- 1/4 tasa hot sauce (i-adjust kung kinakailangan)
- 1/4 tasa ketchup
- 1 kutsara ng kayumangging asukal (opsyonal)
- 1 kutsara ng soy sauce (opsyonal)
Paano Lutuin :
- Hiwain ang gitna ng drumette at pakpak. Tanggalin ang dulo ( pwede din itong ireserba at gamitin pang sabaw ng manok ). Ituyo gamit ang kitchen towel. I-marinade ng asin, paminta, katas ng calamansi. Haluin at i-marinade ng 1 oras o higit pa.
- Para sa Breading: haluin ang mga ito sa ibang lalagyanan. Pagkatapos, takpan ang mga pakpak ng breading. Pagpagin para matanggal ang sobrang breading.
- Maginit ng mantika. Wag iprito ang mga manok ng sabay sabay para mamaintain ang temperatura ng mantika. Iprito ng 10 o 12 minuto o hanggang magkayumanggi.
- Pagkatapos ng 10 minuto, tanggalin sa mantika at palamigin sa strainer ng 15 minuto. Ipriprito muli para maging mas-krispy. Ilagay ang temperatura sa high. Ibalik ang manok at iluto hanggang mag golden. Itabi habang ginagawa ang sarsa.
- Para sa Sarsa : Tunawin ang mantikilya at bawang. Haluan ng ketchup, hot sauce, asukal, at soy sauce. Pagkumapal na ito, haluan ng prinitong manok. Ienjoy!
