Onion Fritters

Onion Fritters is made with white onions, carrots, moringa leaves, garlic, eggs, all purpose flour, pepper and salt. This onion fritters are made with different starchy veggies are made into strips and are tangled and deep fried to form one yummy and delicious treat. Best dipped in special suka! Love it!

DIFFERENT TYPES OF ONIONS AND HOW TO USE THEM

We rarely notice this but did you know that onions come in different varieties? Here are just some of them including how to use them.

Red onions – the very common onion we have. We usually use this as an aromatic base but did you know that this is best when eaten raw? This is the type of onion added to ensaladas and guacamoles.

White onions – These are the ones that we are going to use for this dish. They are the crunchiest and has the sharpest zing when eaten. Just right for a vegetable fritter.

Yellow onion – slightly yellow in color which is best use when adding flavors to stocks, soups and casseroles.

Sweet onion – not really sweet but is a little sweeter than the regular onion. Best when roasting vegetables.

Shallots – looks like baby onions. The taste is relatively mild and is best used for vinaigrette.

The type of onion which is best suitable for the featured recipe is the white onions.

ONION FRITTERS

If you have tried okoy in the past, then the onion fritters is just the veggie version of it. Fritters are one of the best dishes to have if you want to pretend that you’re “eating healthy” (HAHAHA).

Vegetable fritters are one of my comfort foods next to french fries. Since too much french fries is unhealthy, let’s make a dish almost similar to the fries but using vegetables. Fritters is the dish to make especially when you have leftover veggies in your pantry. Most vegetables which are made into fritters are the starchy ones.

But in this recipe, the white onions is the star of the show. With their color and crunchiness, these type of onions are best suitable in being the queen of vegetable fritters. This dish is the best to make when white onions are on sale.

Since I got a sack of white onions for a low price, lets make some onion fritters now!! Aside from fresh suka, you can also experiment with your favorite dipping sauces. Yum!

HOW TO COOK ONION FRITTERS

If you have tried making vegetable fritters in the past, the steps on making onion fritters would be similar, only that the onions will be the highlight of this dish.

Start by preparing all the fritter ingredients. For the onions, I chose to slice them into rings instead of strips. You may add other veggies like kamote or sweet potato but make sure to cut all the other ingredients into large strips.

Combine the veggies, eggs and flour into a bowl. The mixture might look a bit dry at first but as you mix, it will become a sticky one. When done, it’s frying time!

Make sure to check if the oil is hot before placing the fritters in the pan. Slightly press the fritters down to make sure that it is cooked well. When both sides are brown and crispy, transfer them to a strainer to drain excess oil. Removing these excess oil from frying will surely make your fritters ultra crispy and crunchy.

I usually eat my onion fritters together with my spicy special suka. You can also try it with other dipping sauces. I usually eat this as a snack but my friend sometimes eat this with some rice???? We’ll never know unless we try!

Ingredients

  • 2 pieces white onions (cut into rings)

  • 1 small carrot (cut into thin strips)

  • 1/4 cup moringa leaves

  • 2 cloves of garlic (chopped)

  • 3 eggs

  • 1/4 cup all purpose flour

  • Pepper to taste

  • Salt to taste

Directions

  • Prepare the onions and slice them into rings. Separate the rings from one another and then place them into a bowl. Add the carrot strips, the moringa leaves, minced garlic, all purpose flour, eggs, and salt and pepper to taste. Mix until well combined.
  • Heat enough oil in a pan. Scoop around 2 to 3 tablespoons of the mixture and then fry. Flatten them slightly.
  • Fry the fritters until golden brown. Flip to cook the other side. When both sides are golden brown, remove them from the pan and transfer o a strainer or paper towel to drain excess oil.
  • Transfer the onion fritters to a serving plate and serve with your special vinegar dipping sauce. Enjoy!
