Kinamatisang Manok Recipe :

Ingredients

  • 1 kilo chicken (cut into pieces)
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 1 thumb-sized ginger (sliced)
  • 7 pieces tomatoes (cut to wedges)
  • Pepper to taste
  • Fish sauce to taste
  • 1 – 2 cups water
  • 1 small carrot (cut to wedges)
  • 1 small potatoes (cut to wedges)
  • 1 teaspoon sugar (optional)
  • 3 pieces green chillies
  • Oil for cooking

Steps:

  1. Heat some oil in a pan, saute onions for a few seconds before adding in the garlic, then cook in the ginger before adding in the chicken.
  2. Saute chicken pieces until these change color. Mix in tomatoes and pepper. Stir in fish sauce and continue stirring till the tomatoes are soft enough to crush.
  3. Pour in water. Cover and simmer for 15 minutes. After, place in carrots and potatoes. Give it a little mix, cover and simmer till vegetables turn tender. Taste, add sugar if it’s too salty.
  4. Place in green chilies, mix and let this cook uncovered for a few minutes. Transfer to a plate before serving.

Kinamatisang is a hearty comforting dish bursting with savory, slightly spicy, and sour flavors. The term ‘kinamatisang’ came from the word ‘kamatis’ which is the Tagalog for ‘tomato’  which is the base for the stew and where the sourness and savory flavor will come from. A rich tasty dish that’s made of fresh ingredients and enjoyed in many ways (see ‘questions’ for replacements) and is easy enough to add into your weekend rotation of meal plans. Filled with vegetables and a good amount of ‘meat’.

How do you cook Kinamatisang Manok? (Paano magluto ng Kinamatisang Manok?) it all starts with the Kinamatisang Manok ingredients; saute the aromatics, namely onions, garlic, and ginger till aromatic before adding in the chicken that’s been chopped into pieces to make it easier to cook and serve. These are cooked till changes in color, then mixed in with tomatoes that add color and acidity which makes this dish really awaken the taste buds and boost your appetite. Some pepper and fish sauce to add a slight tang and saltiness. Stir this dish often till the tomatoes are soft enough to crush. Pour in some water to help dilute the dish and avoid the bottom of the pan from burning, cover and simmer for a few minutes. Add in the chopped up carrots and potatoes, cover and simmer again till the vegetables are tender. Give this a taste and add some sugar if it tastes too salty or acidic, or add more fish sauce and or salt and pepper if needed. End this dish with a few green chillies for spice and let this simmer together for a few minutes before transferring this mouthwatering dish into a serving plate.

  • What to replace the ‘manok’ or ‘chicken’ with ?
    • You can add or replace the chicken with ‘atay’ or ‘liver’ , especially chicken liver. Liver is great for those who are anemic or lack iron. Replacing the chicken completely with chicken liver turns this dish into a “Kinamatisang Atay ng Manok” recipe.
    • For meat lovers, if you do prefer to use beef as a replacement and make “Kinamatisang Baka”. It would be best to use ground beef or smaller cut chunks as these will lessen the cooking time. It would also be better to cook/simmer the beef with the aromatics for 30 minutes or till tender instead of the 15 minutes, adding more water as needed.
    • Aside from beef you can also use ‘baboy’ or ‘pork’ to make “Kinamatisang Baboy”. Using the same method of cooking as the beef alternative.
  • Additional ingredients
    • Add in leafy vegetables for more fiber like pechay for “Kinamatisang Manok with Pechay” or cabbage (in Tagalog ‘repolyo’) for “Kinamatisang Manok with Repolyo”.
    • Other vegetables you can try adding aside from carrots and potatoes, you can also add ampalaya (bittermelon) which has a lot of health benefits some of which are lower blood pressure, and reduce cholesterol. Try making “Kinamatisang Manok with Ampalaya”.
    • For those who want a strong salty taste try adding ‘tuyo’ or ‘dried fish’ for “Kinamatisang Manok na Tuyo” it not only adds saltiness but adds an aromatic deep taste.
    • For those who want to add a nice smooth savory flavor, try adding a tablespoon or so of oyster sauce to make a “Kinamatisang Manok with Oyster Sauce” dish.

Mga Sangkap :

  • 1 kilo manok (hiniwa sa mga piraso)
  • 1 sibuyas (hiniwa)
  • 4 butil ng bawang (tinadtad)

  2. Iluto ang mga manok hanggang mag iba ng kulay. Haluan ito ng kamatis, paminta, at patis. Ipagpatuloy ang paghalo hanggang lumambot ang mga kamatis.
  3. Buhusan ng tubig. Takpan at pakuluan ng 15 minuto. Pagkatapos ilagay ang mga karot at patatas. Takpan at pakuluan hanggang lumambot ang mga ito. Tikman, at lagyan ng asukal kung masyadong maalat ito.
  4. Ilagay ang mga sili panigang at haluin ito ng ilang minuto. Ilipat sa serving plate bago ihanda.
