Crispy Chicken Nuggets with Spicy Dip Recipe

Ingredients:

For the chicken nuggets:

  • ½ kilo chicken breast
  • 1 tablespoon cornstarch
  • ½ teaspoon salt
  • ½ teaspoon ground pepper

For the coating:

  • ¾ cup cornstarch
  • ¾ cup all purpose flour
  • 2 tablespoons garlic powder
  • 2 tablespoons paprika powder
  • ½ teaspoon ground pepper
  • ¼ teaspoon salt
  • ¾ cup cold water

For the spicy dip:

  • ¼ cup honey mustard
  • 2 tablespoons mayonnaise
  • 2 tablespoons sriracha (or hot sauce)
  • 2 tablespoons of milk
  • 2 tablespoons oyster sauce
  • A pinch of salt and pepper

Directions:

  1. Prepare the chicken breast and add them to the grinder/blender. Grind them until well minced. Add the cornstarch, ground pepper and the salt. Blend them for a few minutes until well combined.
  2. Scoop around 1 – 2 spoons of the chicken mixture and form them into a nugget shape. Do these steps with the rest of the chicken mixture. Then, freeze the nuggets for 30 minutes.
  3. For the dip, combine the honey mustard, mayonnaise, sriracha sauce (or hot sauce), fresh milk, oyster sauce, some pepper and salt in a small bowl. Combine until well mixed. Set aside.
  4. On a wide plate, combine the cornstarch, all purpose flour, garlic powder, paprika powder, ground pepper and salt to make the coating mixture. Mix well.
  5. Dredge and coat each of the frozen chicken nuggets. Shake off the excess.
  6. After coating all of the chicken, add ¾ cup of cold water on the remaining coating mixture. Mix until well combined to make the batter.
  7. Heat a lot of oil in a pan. Dip the coated nuggets in the batter before deep frying them. Cook them in batches to not overcrowd the pan. When golden brown and crispy, remove them from the pan and transfer to a strainer or paper towel to drain excess oil. 
  8. Serve the crispy chicken nuggets together with the spicy honey mustard dip. Make papak or have this with some hot steaming rice. Yum!

My niece asked to stop by McDonalds to buy some chicken nuggets. And just like the meme, I answered her with “We have nuggets at home”. (So this is what it felt like to be a memer!) She cried a lot but me and her mom became firm that we want to lessen her fast foods.

Anyways, I lied a bit on my niece since the nuggets at home are still raw and I still need to prepare it. But what I love about making some homemade chicken nuggets is that it is super easy to make. I prepared my blender and vroom vroom the chicken mixture is done. With some quick frying and sauce mixing, my niece stopped crying after a while.

Since I already lied to my niece, I went full extent. I grabbed a McDonalds paper bag, put the homemade chicken nuggets in it and pretended I got her some Mcdo nuggets. She bought the act! She only looked for the bbq sauce but I just told her they were out of stock so I just prepared her some honey mustard dip.

Making some crispy chicken nuggets is much easier than you think. Do not be intimidated with the long list of ingredients and let me tell you how to make things simpler and quicker.

To make this recipe, you need to prepare three parts: the chicken nuggets, the coatings and the dip.

Let’s start with the chicken nuggets. Unlike the chismis in facebook that chicken nuggets are pure extenders, our chicken nuggets will be made from actual ground chicken. Mixing the chicken and the seasonings is much easier when you have a blender. Simply put all of them in the blender until well mixed. You should expect a sticky chicken mixture.

The next thing you need to do is to shape them as nuggets. You can stick with the usual square shape (just like what I did) or you can grab your cookie cutter and cut them into circles, hearts and letters. (Better if you have a cookie cutter shaped like a dinosaur!) Freeze them for a while just to let it maintain the shape.

The coating is much easier to prepare. Simply combine all the dry ingredients first, then coat the nuggets with it. The remaining mixture will be a wet batter by adding some cold water. We need this to be cold to shock the nuggets when fried, resulting to a crispier and crunchier bites.

For the spicy honey mustard dip, simply combine all the dip ingredients into a bowl. Make sure to do a taste test and adjust what ingredient you would like to add. You can add more of the hot sauce if you like it really hot and spicy.

I like making papak my nuggets. But since we need to be practical, I usually have it with some hot steaming rice. The spicy honey mustard dip truly highlights the flavor of the nuggets. If I would give this a rating, then this dish would surely be a 10/10. Yum!

Chicken Nuggets Recipe

Mga Sangkap:

Para sa chicken nuggets:

  • ½ kilo ng pitso ng manok
  • 1 kutsara ng cornstarch
  • ½ kutsarita ng asin
  • ½ kutsarita ng paminta

Para sa coating:

  • ¾ tasa ng cornstarch
  • ¾ tasa ng harina
  • 2 kutsara ng garlic powder
  • 2 kutsara ng paprika powder
  • ½ kutsarita ng durog na paminta
  • ¼ kutsarita ng asin
  • ¾ tasa ng malamig na tubig

Para sa spicy honey mustard dip:

  • ¼ tasa ng honey mustard sauce
  • 2 kutsara ng mayonnaise
  • 2 kutsara ng sriracha (or hot sauce)
  • 2 kutsara ng gatas
  • 2 tablespoons oyster sauce
  • Asin at paminta

Paano Lutuin:

  1. Ihanda ang pitso ng manok at ilagay ang mga ito sa grinder/blender. Gilingin ito hanggang maging sobrang liliit. Sunod na ilagay ang cornstarch, paminta at asin. Iblender pa ito ng ilang minuto para mahalo ng maayos.
  2. Kumuha ng 1 – 2 scoops ng ginawang mixture at i-shape ang mga ito ng nuggets. Gawin ito sa lahat ng chicken mixture, saka i-freeze ang mga ito ng 30 minuto.
  3. Para sa dip, paghaluin ang honey mustard, mayonnaise, sriracha sauce (o hot sauce), fresh milk, oyster sauce, paminta at asin sa maliit na bowl. Haluin ng mabuti at isantabi.
  4. Para sa coating mixture, paghaluin ang cornstarch, harina, garlic powder, paprika powder, paminta at asin sa malawak na plato. Haluin ng mabuti.
  5. I-coat ang frozen nuggets sa coating mixture. Medyo ishake para mahulog ang mga sobra.
  6. Kapag na-coat na ang lahat ng nuggets, lagyan ng ¾ tasa ng malamig na tubig ang natirang coating mixture. Haluin ito ng mabuti para maging batter.
  7. Magpainit ng maraming mantika. I-dip muna sa batter ang mga nuggets bago ideep fry. Lutuin ang mga ito by batch para hindi mapuno ang kawali. Kapag golden brown at crispy na, hanguin na ito. Ilipat ang mga ito sa strainer o paper towel para tumulo ang sobrang mantika.
  8. Ihain ang crispy chicken nuggets kasama ng ginawang spicy honey mustard dip. Papakin or samahan ito ng mainit na kanin. Yum!
