Ingredients

  • For the Filling
  • 2 carrots ( chopped )

  • 1 potatoes ( chopped )

  • Oil for cooking

  • 1 onion (chopped )

  • 3 tablespoons garlic ( minced )

  • 500 grams ground beef

  • 2 – 3 tablespoons soy sauce

  • Salt and pepper to taste

  • 1 tablespoon ketchup

  • 1 – 2 curry roux

  • For the Bread
  • 2 tablespoons sugar

  • 1 teaspoon yeast

  • 1/3 cup water ( for yeast )

  • 2 cups bread flour

  • 1 teaspoon salt

  • 1 tablespoon oil

  • 1/3 cup water or milk

  • 2 large eggs

Directions

  • For the Filling
  • In a microwavable bowl, place in carrots and potatoes add 2 – 3 tablespoons of water before covering with cling wrap. ‘Cook’ in the microwave for 2 – 3 minutes.
  • These should easily be pierced with a fork. Microwave for another 1 – 2 minutes if needed. Repeat until tender. Set aside.
  • In a pan at medium heat; add some oil. Once hot, saute onions until soft, then garlic until fragrant. Add in the ground beef and cook until most of these have changed in color.
  • Season with soy sauce. Add in the softened carrots and potatoes. Season with salt and pepper. Mix well.
  • Add in ketchup and curry roux. Mix until the cube has melted. Add another cube if the filling still looks too wet. Set aside.
  • For the Dough
  • For the dough mix sugar, yeast, and warm water. Set aside for 5 – 10 minutes or until foamy.
  • Add in the bread flour and salt. Mix well. Pour in warm water or milk then mix well. Mix in oil and knead until you form a smooth dough. To know if it’s ready, the dough should ‘bounce back’ when poked.
  • Place in a bowl greased with a bit of oil. Cover with cling wrap and let this rise for 1 hour or until it doubles in size. Then take this out and place it over a smooth surface or silicon pad.
  • Give this a little knead. Slice into 10 equal pieces. Take a piece, flatten it with a rolling pin. Place 2 tablespoons or ¼ cup of filling in the middle. Take the sides of the dough and bring these to the middle.
  • Give these a good pinch in the middle to make sure it’s sealed. With the seal side down, roll these with a bit of pressure. Flatten slightly.
  • After making 10 big palm-sized pieces set aside. Beat eggs in their own shallow plate, then add breadcrumbs in another. Dip the dough in the egg wash, then coat with breadcrumbs.
  • In a pan at medium low heat, add enough oil for frying. Once bubbling, place in the bread and flip once one side is golden. Try to cook the corners if you can. This just takes a few minutes to brown.
