Ingredients

  • 3 pieces chicken leg quarters

  • 1 cup Sprite or 7up

  • 3 tablespoons calamansi juice

  • 3 tablespoons soy sauce

  • 2 tablespoons oyster sauce

  • 4 tablespoons ketchup

  • ½ teaspoon pepper

  • 6 cloves garlic, minced

  • 1 tablespoon brown sugar

  • 1 piece chili (optional)

Directions

  • Make shallow slits all over the chicken leg quarters. Place these in a bowl and mix in Sprite or 7up, calamansi juice, soy sauce, oyster sauce, ketchup, pepper, garlic, sugar, and chili (optional). Mix well and Marinate for 1 hour.
  • Keep the marinade and sear the chicken in a pan until it browns (skin side down). Flip to cook evenly. Repeat till the chicken is cooked.
  • Pour in the marinade. Cover and simmer for 10 minutes. Uncover and flip, letting this simmer uncovered till the sauce has reduced.
  • Once the sauce is gone and the chicken looks slightly charred, take this out. Serve with a side of spiced vinegar.
