Aside from cool beverages, ice creams and popsicles, another favorite summer treat which can help us beat the heat are ice candies. Ice candy is a type of frozen dessert which can be flavoured by almost anything. It is a milk-based dessert which is packed in a small and thin plastic and is held by the hand when eaten. The two most common flavors are chocolate and fruits.

As a child who grows up selling ice candies, I bet I am one of those knowledgeable when it comes to ice candy. This treat is not just a simple treat for me since it is one of the first foods I was able to sell in our neighbourhood. Back when I was 10, my mom taught me how to make and sell ice candies for some extra money. I was a fun experience making a chilly snack while making money on the side.

The most fun part of making ice candies is you can experiment with different flavors. Just like ice cream, add any flavor to a milk base and then transfer to plastics and then freeze. Making it is as easy as making ice!

When you see a green ice candy, it’s probably buko pandan. Nothing beats buko and pandan combo in a refreshing ice candy and is one of the usual flavor served by our favorite kuya who roams in the neighbourhood. Buko pandan is one of the most native and Filipino taste. Aside from the fresh coconut taste and the pandan aroma, its green color also makes it attractive and more appealing to the eye.

HOW TO MAKE BUKO PANDAN ICE CANDY

Making buko pandan ice candy is SUPER easy. Even if the only experience you have similar to this is making ice, you will surely make this awesome treat without any hassle.

Unlike ice candies made with powdered juices, our ice candy is made with the freshest and natural ingredients. With that, we’re gonna make a few steps to make is the creamiest and the sweetest as possible. So instead of just mixing everything together and then put in ice candy plastics, combine all the ingredients in a pot and we will simmer it for a while.

Quick note: Since we are making buko pandan flavoured ice candy, I used buko pandan condensed milk. If not available, you can use the regular one.

You might notice that some milk-based ice candies have a grainy or “icy” texture. To make our buko pandan ice candy a lot smoother, adding a slurry made with cassava flour and water is they secret hack.

Use a funnel to transfer the mixture easier. Some bits might clog the funnel so use a chopstick to push the bits. Twist and tie the end of the plastics to seal it.

The last thing you need to do is to wait overnight for them to freeze so you have a chilly nice treat the next day! Make a large batch and eat them whenever you like. Enjoy!

Buko Pandan Ice Candy

Ingredients

  • For the buko pandan mixture:
  • 2 liters water

  • 1 can (390g) condensed milk

  • 1 can (300g) evaporated milk

  • 1 cup young coconut (shredded)

  • 1 cup cassava flour or cornstarch or matling (dissolved in 1 cup water)

  • sugar to taste

  • 3 to 4 drops pandan flavor

  • 1 pack buko pandan flavoured gelatin

  • For the gelatin:
  • 4 cups water

  • Buko pandan flavor gelatin powder

  • 1/3 cup sugar

Directions

  • For the buko pandan mixture:
  • Boil the water in a pot. Once boiling, add the evaporated milk and condensed milk. Stir well. Taste for sweetness and add sugar as needed.
  • Add the shredded coconut and pandan flavor. Mix well and let it boil.
  • In a small bowl, combine the cassava flour and water. Stir well and make sure there are no lumps. Pour this to the boiling milk mixture. Stir continuously. Let this simmer for 5 minutes using low heat.
  • Turn off the heat and let the mixture cool completely.
  • For the gelatin:
  • Pour the water in a pot. Add the buko pandan flavoured gelatin powder and sugar. Mix well to dissolve.
  • Heat the mixture and let it boil. Once boiling, remove from the heat.
  • Transfer the gelatin mixture to a heat-proof tray. Let it cool and set.
  • Once set, cut them into small cubes.
  • Buko pandan Ice Candy:
  • Once the buko pandan mixture has cooled completely, add the gelatin cubes. Stir and mix until the gelatin are well-distributed.
  • Transfer the mixture to ice candy plastics. Twist and tie the end of the plastics. Repeat these steps with the rest of the mixture.
  • Freeze the buko pandan ice candy overnight. Eat them the next day. Enjoy!

Paano Magluto ng Buko Pandan Ice Candy

MGA SANGKAP:

Para sa buko pandan mixture:

  • 2 litro ng tubig
  • 1 lata (390g) ng condensed milk
  • 1 lata (300g) ng evaporated milk
  • 1 lata ng young coconut (shredded)
  • 1 tasa ng cassava flour o cornstarch o matling (tinunaw sa 1 tasa ng tubig)
  • asukal
  • 3 – 4 drops pandan flavor
  • 1 pack buko pandan flavoured gelatin

Para sa gelatin:

  • 4 tasa ng tubig
  • Buko pandan flavor gelatin powder
  • 1/3 tasa ng asukal

PAANO LUTUIN:

Para sa buko pandan mixture:

  1. Magpakulo ng tubig. Kapag kumukulo na, ilagay ang evaporated milk at condensed milk. Haluin ng mabuti. Tikman at dagdagan ng asukal kung kailangan.
  2. Ilagay ang shredded coconut at ang pandan flavor. Haluin at hayaan itong kumulo.
  3. Sa isang maliit na bowl, paghaluin ang cassava flour at tubig. Haluin at siguraduhing walang lumps. Ilagay ito sa kumukulong milk mixture at haluin ng tuloy-tuloy. Lutuin ito ng 5 minutes gamit ang mababang apoy.
  4. Patayin ang apoy at palamigin ang milk mixture.

Para sa gelatin:

  1. Maglagay ng tubig sa pot. Ilagay ang buko pandan flavoured gelatin powder at ang asukal. Haluin para matunaw.
  2. Painitin ang mixture hanggang sa kumulo. Kapag kumukulo na, patayin ang apoy.
  3. Ilipat ang gelatin mixture sa isang heat-proof tray. Hayaan itong lumamig at tumigas.
  4. Kapag matigas na, hiwain ito sa maliliit na cubes.

Buko pandan Ice Candy:

  1. Kapag malamig na ang buko pandan mixture, ilagay ang gelatin cubes. Haluin ng mabuti.
  2. Ilipat ang mixture sa ice candy plastics. Itali ang dulo ng mga plastics. Gawin ang mga steps na ito sa iba pang mixture.
  3. I-freeze ang buko salad ice candy overnight. Kainin ito kinabukasan. Enjoy!
