CREAMY TOFU WITH OYSTER SAUCE

Tofu with oyster sauce

Tofu dishes are the best especially if you haven’t had tofu for a long time. I rarely prepare tofu but when I make them, I eat A LOT. Tofu is really fond to eat when they are in cubes. Maybe it was psychological? But tofu tastes better when in cubes since they are just like small pieces of food. And you’ll be surprised that you already ate a plate of it!

Aside from fried tofu, my second favorite tofu dish is the tofu sisig. I discovered this creamy tofu with oyster sauce when I was about to make some tofu sisig but the mayonnaise suddenly disappeared. This was during a celebration at our house where the tofu is the pulutan. I thought it was due to a ghost that’s why the mayonnaise disappeared, then I saw them dipping the lumpia in mayo. OKAAAAYYY.

Thankfully I still have some cream left at the fridge. That’s when the creamy tofu with oyster sauce was born. If you want a creamy flavor rather than the subtle mayo flavor in your tofu, then this dish is for you!

SOFT TOFU VS REGULAR TOFU

I added this section to this recipe because I never felt the importance of knowing the difference between the soft and regular tofu not until I accidentally bought a soft tofu for frying. Hoping you’d never experience this too!

creamy tofu cooking

I really love tofu. My love for tofu started as a child when my mom bought me tofu from Chowking. They have this special sauce which really makes the tofu really tasty! Since then, we have been making fried tofu at home. We usually buy our tofu from the market, so that we’ll know that it is made fresh.

I was left alone to do the grocery and craved tofu. I quickly grabbed the packed tofu I saw and then paid. I opened the pack and noticed that the tofu was really… soft? I checked the expiration date and it is still safe to consume. I started cutting them into cubes and the tofu crumbled in front of my eyes!!  So… check the packaging first if you get a regular or a soft tofu.

The soft tofu is best for ramens, noodles, hotpots and soups. They are easily cooked with the broth/liquid. They are too soft and crumbles easily. Meanwhile, the regular tofu is similar to the ones you see in the market. They are firm and are best for frying.

The tofu we are going to use for this recipe is the regular tofu. Make sure you got the right one!

HOW TO COOK CREAMY TOFU WITH OYSTER SAUCE

How to cook Creamy Tofu

Tofu is one of the easiest ingredients to manage so you’ll know that this dish will be an easy one.

Let’s start with the tofu. Slice them into small cubes and pat them dry first using a tissue. This is to prevent too much oil splashing for later (trust me on this). When dry, add them all to the hot oil. Do not stir from time to time, especially when you are not using a non-stick pan. The tofu will release itself from the pan once the side facing the pan is already cooked. To know if the bottom is cooked, I usually shake the pan gently. When released, then you may start stirring for the other sides to cook.

To put all the ingredients together, saute the aromatics and the tofu. Add the rest of the ingredients and stir well. For the complete umami flavor, add the oyster sauce. You may opt to add the chilies if you like this spicy (I love spicy so much that I used both red and green chilies!). Remember not to use high heat to prevent the cream from scorching.

Once done, transfer the creamy tofu with oyster sauce to a serving plate. If you will be eating this as a pulutan, transfer it to a sizzling plate.  Yum!
