Pancit Canton Guisado

Pancit canton guisado is a Filipino noodle dish, where canton noodles is stir fried with chicken, chicken liver, cabbage, carrot, green beans, squid balls in a sauce made with soy sauce, oyster sauce. garlic, onion and fish sauce. With the presence of noodles, veggies and meat, the pancit canton guisado can already be considered a full meal. This dish can be compared to the Chinese chow mein. Often, both chicken and chicken liver are used as protein sources.

PANCIT CANTON GUISADO RECIPE

Ingredients:

  • 500 grams canton noodles
  • 250 grams chicken (sliced)
  • 250 grams chicken liver (sliced)
  • 3 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 1 small head cabbage (chopped)
  • 1 medium carrot (sliced into strips)
  • 5 cloves of garlic (chopped)
  • 1 medium onion (chopped)
  • 10 pieces squid balls (sliced in half)
  • ½ cup green beans (sliced)
  • 1 tablespoon fish sauce
  • oil (for sauteing)

Directions:

  1. Heat some oil in a pan. Add the squid balls and then fry them until light brown. Set aside.
  2. Using the same pan, add the garlic and onions. Saute them for a few minutes until aromatic before adding the chicken. Once the chicken changes color, add the chicken liver. Saute them for a few minutes until the both chicken and liver changes color.
  3. Add the carrot strips. Season with some salt and pepper.
  4. Add the green beans. Cover the pot and let this cook for 3 to 5 minutes before adding the sliced bell peppers and cabbage. Saute gently until the cabbage are half cooked.
  5. Remove the veggies from the pan and set aside.
  6. Using the same pan, add some water, soy sauce, black pepper, and the chicken broth cube. Stir gently and let it boil.
  7. Add the canton noodles into the broth. Submerge them to cook and soften. You may need to stir the noodles a few times. Let this cook until the sauce dries up.
  8. Once the sauce has dried, add the oyster sauce, fried squidballs and the mixed veggies. Toss gently until all ingredients are well distributed. Once all the ingredients come together, turn the heat off.
  9. Transfer the pancit canton guisado to a serving plate. Enjoy this as it is or have it with some slices of loaf bread. Dont forget to drizzle some calamansi juice before eating. Yum!

Canton noodles is one among the varieties of noodles which are commonly cooked as stir fried. According to history notes, pancit canton is the Filipino adaptation of the Chinese choe mein or stir fried noodles. The resemblance is uncanny and both noodles has quite similar flavors. The original pancit canton recipe is believed to be originated in the Canton City of Guangzhou, China.

Among the dishes highly influenced by the Chinese cuisine, pancit canton guisado was truly a Pinoy fave as it is often served in celebrations.

PANCIT CANTON GUISADO

Pancit canton has been a classic dish when it comes to celebrations. This traditional dish has been slowly fading due to the commercialized instant pancit canton noodles. While the instant noodle version can be cooked for just 3 minutes, the health benefits of this compared to the traditional one is very low.

I am also guilty of this. And our plan of action = To re-incorporate the traditional and healthy pancit canton into people’s diets. If you know someone who always eat instant noodles, one strategy is to help them realize that non-instant dishes are much more flavorful, healthier and actually not to hard to make!

Pancit guisado is not a part of this week’s meal plan but I decided to make one since my friend, who works in a call center, shared with me that he can finish 10 packs of instant pancit canton in a week. That would be a diet with high calories, high bad fats and low nutrients. As a friend who doesn’t want him to settle for the small chunks of veggies on the seasoning packet, I made a gesture of making him homemade pancit canton full of veggies. I added his favorite squid balls to keep him digging in. At least for now, the veggies from the noodles can give him extra nutrients while keeping him full.

HOW TO MAKE PANCIT CANTON GUISADO

Making pancit canton has a little extra steps when compared to the instant noodle we know. Despite the extra time to spend, everything will be much more worth it as the pancit canton is savoury, meaty, filled with toppings, and of course, healthier.

The first thing to do is to prepare all ingredients. For this recipe, I used three types of veggies. A simple reminder for the green beans, cut and remove both ends of the beans, including the thread-like part on the side. Not doing this will result to an uncooked green bean. If you want to add more vegetables, feel free to do so. Other veggies which will greatly add quality to this dish that I can think of may include broccoli, cauliflower and mushrooms.

For the veggies, all you need to do is to simply stir fry them. With whatever veggie you will use, analyze which veggies are quick to cook and those who cook longer, to prevent overcooking and wilting. Once stir fried, set them aside for a while.

Unlike other noodles which are boiled then strained, a pancit canton guisado starts with a flavorful broth which is will be absorbed by the noodles for later. The broth is simply made with veggie broth (or any broth you like) and then flavored with soy sauce and seasonings. Be careful when adding salt or fish sauce. When estimating the amount of water to add in the broth, it is better to have less than to have too much. Having too much will make the noodles super soggy instead of just saucy.

Pancit canton noodles are crispy. Place them into the broth gently. The soften quickly but you will be needing to flip or somehow baste the noodles with the broth to make things easier. When the broth is almost fully absorbed, add the veggies back to the noodles and toss them together.

The pancit canton guisado is best eaten with a little drizzle of kalamansi juice. You can still add seasonings like soy sauce or fish sauce if you like. Aside from eating it as it is, I love my pancit canton as a filling to my loaf bread. Yum!

Pancit Canton Guisado Recipe Tagalog

Mga Sangkap:

  • 500 grams canton noodles
  • 250 grams manok (hiniwa)
  • 250 grams atay ng manok (hiniwa)
  • 3 kutsarang toyo
  • 3 kutsarang oyster sauce
  • 1 maliit na repolyo (hiniwa)
  • 1 carrot (hiniwa ng strips)
  • 5 butil ng bawang (hiniwa)
  • 1 sibuyas (hiniwa)
  • 10 pirasong squid balls (hinati)
  • ½ tasang green beans (hiniwa)
  • 1 kutsarang patis
  • mantika (pang gisa)

Paano Lutuin:

  1. Magpainit ng mantika. Iprito ang mga squid balls hanggang maging light brown. Isantabi.
  2. Gamit ang parehong kawali, igisa ang sibuyas at bawang ng ilang minuto hanggang maging light brown. Saka ilagay ang manok at igisa hanggang maging light brown. Sunod na ilagay ang atay ng manok at gisahin hanggang mag iba ang kulay.
  3. Ilagay ang mga carrot strips. Timplahan ito ng asin at paminta.
  4. Ilagay ang mga green beans. Takpan ang kawali at hayaan itong maluto ng 3 hanggang 5 minuto bago ilagay ang bell peppers at repolyo. Igisa ang mga ito hanggang halos maluto na ang repolyo.
  5. Alisin ang mga gulay sa kawali at isantabi sa ibang lalagyan.
  6. Gamit ang parehong kawali, maglagay ng tubig, toyo, paminta at ang chicken broth cube. Haluin ng konti at pakuluan.
  7. Ilagay ang canton noodles sa kawali at ilubog ang mga ito sa sabaw para maluto. Haluin ng ilang beses ang noodles para lumambot lahat ng sabay sabay. Lutuin lang ito hanggang maiga ang sabaw. 
  8. Kapag iga na ang sabaw, ilagay ang oyster sauce, pritong squid balls at ang mixed veggies. Haluin ng mabuti. Kapag luto na, patayin ang apoy.
  9. Ilipat ang pancit canton guisado sa serving plate. Samahan ito ng kalamansi kapag ihahain na. Samahan ito ng loaf bread. Yum!
