What is Ice Candy?

Ice Candy is a popular frozen dessert in the Philippines, enjoyed especially during hot summer days. It is a simple and refreshing treat made by freezing a flavored liquid mixture in long, narrow plastic bags or molds. The mixture typically consists of fruit juices, milk, sugar, and sometimes additional ingredients like chocolate, coconut, or other flavors. This summer treat is believed to have been influenced by various frozen desserts from different cultures.

Aside from halo-halo, ice candy is one among the most awaited treats during summer time. From classic flavors like mango, buko (coconut), and melon, to unique combinations and creative variations, ice candy offers a refreshing and convenient way to cool down and satisfy one’s sweet tooth.

Mango Ice Candy

Ice candy’s popularity in the Philippines can be attributed to its simplicity, affordability, and accessibility. It emerged as a homemade treat that provided a refreshing respite from the tropical heat. Usually, people make large batches of ice candy for the purpose of selling. I can still remember ice candies which are being sold for 2 pesos each. I wonder how much are ice candies being sold today.

If you’re a Batang 90s, then you can totally remember our favorite Jolly Ice Candy which we cut in the middle and share with our playmate. Most of the ice candies nowadays were made using juice powder unlike before where fresh fruits are juiced to make ice candies. (No wonder why not many kids are excited with ice candies now).

I can still remember having a hard time when choosing the flavor of my ice candy. One of the best ice candies I’ve tasted was from my Tita Mendy, who was the neigborhood’s cooling store. She has ice candy, ice creams, palamig and halo-halo. She has various flavors for her ice candy which includes strawberry, mango and pandan. Her ice candy stood out from the others since hers has this distinct type of smoothness and creaminess. Ice candies from others stores just felt as hard as an ice, but with flavor haha.

Among Tita Mendy’s ice candies, the mango flavor is my favorite. I can still remember watching her preparing the fresh mangoes and tasting them if they are sweet enough before adding to the batch. Mangoes are often considered one of the best fruits for making ice candy due to their sweet and tropical flavor profile. Mangoes are naturally sweet and have a rich, luscious flavor. This sweetness adds a delicious taste to the ice candy, making it a satisfying and refreshing treat.

The creamy and smooth texture when pureed or blended gives the ice candy a creamy and velvety mouthfeel, making it even more enjoyable to eat.

The good thing was I knew how my Tita Meldy made her ice candies more smooth and creamy. And I will share the secret to you in this recipe! If you wanna know how to make mango ice candies either for selling or personal consumption, simply read and follow the quick and easy steps below!

How to Make Mango Ice Candy

Most people just want to buy their ice candies because prepare them seems to be laborious. While there is a little truth in that statement, I think now is the perfect time to share one of my favorite quotes: “Enjoy the journey, not the destination” (But of course we will enjoy the ice candies in this case!

Preparing the fruit blend for ice candies is really easy. To have the best ice candy in town, I still do my Tita Meldy’s technique. Taste the mangoes before adding into the blend! The best mangoes are the overripe ones. To prepare the mangoes, simply blend them with milk.

Here is the secret to the ice candy’s creamy texture: cassava flour! Who would have wondered that there is flour in an ice candy?! To prepare this, simply dissolve the cassava flour in a cup of water before adding into the main pot of sweetened water which serves as the ice candy base. Then, add the rest of the ingredients to complete the blend. Do a taste test and adjust the sweetness accordingly. Based on my personal experience, I like to make my base extra sweet since the sweetness is toned down once the ice cream freezes.

Now comes the very time-consuming part: transferring the mixture to ice candy bags. I used 1 & ½ size of ice candy bags using this recipe and yields around 50 pieces of ice candies. Do this with your family and have this as your bonding time. Just make sure that the ice candies are the same in length!

I usually enjoy my frozen mango ice candy during the noon time. This serves as my dessert after lunch, and my snack during the afternoon. It’s just something you can resist once you started with one! Yum!
