1 whole chicken (cut in parts)
1 teaspoon salt
2 teaspoon pepper
4 calamansi (juice extracted)
3 cups all purpose flour
2 tablespoons butter
2 tablespoons all purpose flour
1 ¼ cups milk
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic powder
1 ½ cups shredded cheese
1 ½ teaspoon paprika
- For the Chicken
- Prepare the cleaned chicken in a bowl. Season these with salt, pepper, calamansi juice, and massage well into the chicken. Cover with cling wrap and leave it in the fridge to marinate up to 3 hours.
- Prepare the ingredients for dredging. Place flour in a zip lock bag and beat the eggs in a bowl.
- Dip the each chicken piece in flour, coat it with the eggs mix, then thoroughly coat again with flour. Lightly shake off excess flour. Repeat the process till you’ve covered all the chicken parts.
- In a pan add oil and heat it to 350°F or 177°C, carefully place the chicken and fry each side for 5-6 minutes. Once all sides have turned golden brown take these out to cool on a wire rack over a tray or over a kitchen towel. This also helps remove any excess oil.

- In a pan at medium heat melt the butter and add in all purpose flour. Mix till it looks like a paste.

- 1 buong manok (hinati sa parte)
- 1 kutsaritang asin
- 2 kutsaritang paminta

- Sa kawali na may mantika at init ng 350°F o 177°C, ingatan ang paglagay ng mga manok sa kawali, lutuin ang bawat gilid ng 5-6 na minuto.
