Vegetable Lumpia (Lumpiang Gulay)

Lumpiang Gulay is a popular Filipino vegetable spring roll, also known as vegetable lumpia/ This simple lumbia contains a scrumptious mixture made with fried tofu, ground pork, carrot, green beans and other spices. These are wrapped in lumpia wrapper and sealed with a corn starch slurry. Fried until these look like golden crisp bars. These are served with a tangy and subtle sweet sauce for Vegetable Lumpia.

Ingredients

  • For the Lumpia
  • 250 grams firm tofu ( sliced to squares )

  • 5 cloves garlic ( minced )

  • 1 onion ( chopped )

  • 400 grams ground pork

  • Salt and pepper to taste

  • 1 medium carrot ( sliced )

  • 1 pork cube

  • 250 grams green beans ( chopped into small pieces )

  • 1 pack bean sprouts

  • 2 stalks celery ( chopped )

  • Cornstarch dissolved with a bit of water

  • Oil for frying

  • Lumpia wrappers

  • For the Sauce
  • 1 onion ( chopped )

  • 3 tablespoons brown sugar

  • ½ teaspoon salt

  • ½ teaspoon pepper

  • 1 tablespoon soy sauce

  • 1 cup vinegar

Directions

  • In a pan with hot oil; fry tofu slices until both sides are brown and crisp. Chop these into small pieces and set aside.
  • In another pan; add some oil and saute garlic until aromatic before the onion. Once onions are soft, add in the ground pork,season with salt and pepper, and cook until these change in color.
  • Cover and simmer for a few minutes until the fats have been rendered. Cook until most of the juices have dried up. Add in carrots and pork cube, cook for 3 minutes.
  • Mix in green beans and cook for 3 minutes. Then stir in bean sprouts and saute for a minute or until it withers. Add in the celery and fried tofu. Toss for a minute before letting it cool.
  • Wrap this up with lumpia wrappers. On the wrap, place a scoop of the filling near the end and roll midway before folding in the ends. keep rolling and seal the end with cornstarch-water before sealing completely.
  • Repeat until all the vegetable mix has been wrapped. In a pan with oil at medium heat, carefully add in the lumpia and fry until they turn golden brown. Set aside in a serving tray of strainer.
  • For the sauce; in a bowl mix together onion, brown sugar, salt, pepper, and soy sauce. Boil the vinegar to let the acidity evaporate, then pour this into the sauce mixture.

How to cook this Fried Lumpia? First prepare the fillings; fry the tofu squares until lightly browned and crisp. Chop these into smaller pieces and set aside while you create the base of sauteed garlic, onion, then cook the ground beef seasoned with salt and pepper, until these change in color. Cover and simmer until the fats have rendered. This might make the dish look watery but just let this cook, mixing often until the juices have dried up. Add in some sliced carrots, and a pork broth cube for a few minutes or until the carrots are slightly tender. After, mix in the chopped green beans, cooking these until tender then add in the cleaned and strained bean sprouts, sauteing these for a few seconds until slightly wilted. Mix in chopped celery and the fried tofu. Set this aside to cool to make it easier to wrap.

To arrange the lumpia, place the vegetable mixture slightly at the end of the lumpia wrapper. Roll till you get into the middle before folding in the flaps and rolling this until the end. Seat with a diluted cornstarch slurry. Repeat until all of the vegetable mix is gone. Then in a pan with some oil, fry the lumpia until browned on one side, flipping to the other side. Cook again for a few minutes until golden. Place this on a serving plate or strainer with a refreshing, slightly sweet side sauce made of onion, brown sugar, salt, pepper, soy sauce, and vinegar that has been boiled for a few minutes just to remove it slightly of its acidity. You can smell the vinegar slightly subside during the simmering stage. Add this boiling vinegar into the sauce mix and you’re done!

Lumpiang Gulay Resipi: (Tagalog version)

Mga Sangkap :

Para sa Lumpia

  • 250 gramo tokwa ( firm, hiniwa ng pa parisukat ) 
  • 5 butil ng bawang ( tinadtad )
  • 1 sibuyas ( tinadtad )
  • 400 gramo ground pork
  • Asin at paminta panlasa
  • 1 karot ( hiniwa ng pahaba )
  • 1 pork cube
  • 250 gramo sitaw ( hiniwa ng maliliit )
  • 1 pakete ng toge
  • 2 tangkay ng kintsay ( hiniwa )
  • Cornstarch na tinunaw ng kaunting tubig
  • Mantika panprito
  • Lumpia wrappers

Para sa Sarsa

  • 1 sibuyas ( tinadtad )
  • 3 kutsarang kayumangging asukal
  • ½ kutsaritang asin
  • ½ kutsaritang paminta
  • 1 kutsarang soy sauce
  • 1 tasa suka

Paano Lutuin :

  1. Sa kawali na may mainit na mantika; iprito ang mga tokwa hanggang mag kayumanggi. Hiwain ng maliliit na piraso at itabi.
  2. Sa ibang kawali, maginit ng kaunting mantika at lutuin ang bawang hanggang bumango bago lutuin ang sibuyas. Kapag lumambot na ang mga ito haluan ng ground pork, asin, at paminta. Luuin hanggang mag iba ng kulay. 
  3. Takpan at pakuluin ng ilang minuto hanggang matunaw ang mga taba. Lutuin hanggang mag eveporate ang mga katas nito. Haluan ng karots at pork cube, lutuin ng 3 minuto.
  4. Haluin ang sitaw at lutuin ito ng 3 minuto. Haluan ng toge at lutuin ng 1 minuto o hanggang lumanta. Haluin din dito ang kintsay at tokwa. Tanggalin sa kalan at palamigin.
  5. Balutin ito gamit ang lumpia wrappers. Sa dula ng wrapper ipwesto ang laman. Irolyo hanggang sa gitna at tiklupin ang mga gilid bago itrolyo pa-dulo. I-seal gamit ang cornstarch-tubig.
  6. Ulitin hanggang na ubos ang gulay na mixture. Sa kawali na may mainit na mantika sa katamtamang init. Ilagay ang mga lumpia dito at lutuin hanggang mag kayumanggi ang kulay. Itabi at i-lugar sa serving trey o salaan.
  7. Para sa sarsa; maghanda ng mangkok at haluin dito ang sibuyas, asukal, asin, paminta, at soy sauce. Pakuluin ang suka para ma-evaporate ang pagkaasim nito bago haluin sa mangkok.
