The Caldereta sometimes spelled as “Kaldereta” is a common but still beloved Filipino dish-stew that typically uses goat meat, but some households use beef, pork or chicken as these are easier to find and clean. Made with a medley of rich, tangy, savory, and subtly sweet ingredients, the usual Filipino flavor profile. The meat is seasoned for a few hours or overnight before being seared to give it color and structure before being simmered in a tomato base until tender, adding vegetables for color and additional taste, cooked all together till it’s thick and hearty.

Easy Pork Ribs Caldereta Recipe :
Ingredients :
- 1 kilo pork ribs, chopped separately
- ⅓ cup pineapple juice
- 3 tablespoons soy sauce
- 1 teaspoon black pepper
- 2 medium potatoes, chopped
- 1 small carrot, chopped
- 4 cloves garlic, minced
- 1 large onion, sliced
- 2 tablespoons tomato paste
- 2 – 3 cups water
- 1 can liver spread
- 2 tablespoons sweet pickles
- ½ cup cheese
- 1 Red and green bell peppers, chopped
- Salt to taste
- Red chillies (optional)
- Oil for searing
Steps :
1. Place the ribs in a bowl, pour in pineapple juice, soy sauce, and pepper. Mix well and let this marinade for 1 hour.

2. Heat oil in a pan, add in the potatoes and cook until lightly browned, set aside. Repeat for the carrots, and set these aside as well.

3. With the remaining oil. Sear the pork ribs till both sides have browned. Set aside. Save the leftover marinade.

4. Add garlic into the pan cook till aromatic, then add in the onions saute till soft before adding the tomato paste and saute this for a minute.

5. Place back the ribs and give it a good mix, pour in the leftover marinade and water. Cover and let this simmer for 40 – 45 minutes till the meat is tender. This should easily be pierced by a fork to know if it’s tender enough.

6. Add a can of liver spread and pickles. Mix well. Add in the carrots, potatoes, cheese, and bell peppers. Mix before covering and cooking for another 5 – 8 minutes at low heat.

7. Add salt to taste, and some red chillies if you like it spicy. Mix well before serving.

Mga Sangkap :
- 1 kilo pork ribs, hiniwa ng isa’t isa
- ⅓ tasa pineapple juice

Paano Lutuin :
- Ilagay ang mga ribs sa isang mangkok at haluan ito ng pineapple juice, soy sauce, at paminta. Imarinate ng 1 oras.
- Initin ang mantika sa kawali, lutuin ang mga patatas hanggang mag kayumanggi, itabi. Ulitin ito sa mga karot, itabi pagkatapos.
- Gamit ang natitirang mantika, itabi nag marinade at iluto ang mga pork ribs hanggang mag kayumanggi ang magkabilaan. Itabi.
- Lutuin ang bawang hanggang mabango, isama ang mga sibuyas at lutuin hanggang lumambot bago haluan ng tomato paste, lutuin ang mga ito ng 1 minuto.
- Ibalik ang mga ribs at haluan ng natirang marinade at tubig. Takpan at pakuluin ng 40 – 45 minuto hanggang lumambot.
- Malalaman pag malambot na ito kung mabilis ito tusukin ng tinidor. Haluan ng liver spread at pickles. Pagkatapos haluan ng carrots, potatoes, keso, at pula at berdeng paminta. Takpan at lutuin ng 5 – 8 minuto sa mababaw na init.
