Paksiw na Tilapia Recipe :

Ingredients

  • 1 kilo tilapia ( descaled )
  • 2/4 kilo pork belly ( cut to chunks )
  • Ginger ( sliced ) 
  • 1 medium onion ( sliced )
  • 6 cloves garlic ( minced )
  • Salt and pepper to taste
  • 2 small eggplant ( sliced )
  • 2 pieces tomatoes ( sliced )
  • 6 pieces green chillies
  • 2 cups water 
  • ⅓ cup vinegar
  • 1 tablespoon sugar ( optional )
  • Fish sauce to taste
  • 5 red chillies

Steps:

  1. In a pan, saute pork belly chunks till it fully changes into a light brown color. Or till the fats start to render. 
  2. Place in the tilapia, ginger, onion, garlic, salt, pepper, eggplant, tomatoes, green chillies, water, and vinegar. Cover and simmer for 10 – 15 minutes.
  3. Taste. Add in sugar if needed, then add in fish sauce to taste. Place in red chillies and let this cook for a few minutes.
  4. Serve over rice.

    • If you want a creamier option called “Paksiw na Isda with Gata”; traditionally “Ginataang Paksiw na Tilapia” is made with coconut milk or coconut cream for more aroma and nuttiness, but you can also use regular milk or for a thicker and slightly sweeter texture use evaporated milk. How to cook Paksiw na Tilapia with Gata? Simply pour 2 cups of the choice of milk instead of 2 cups of water. You can also do 1 cup water and 1 cup milk if you’d like.
    • Add other vegetables like pechay or FIlipino bok choy for “Paksiw na Tilapia with Pechay“, ampalaya or bitter gourd for  “Paksiw na Bangus with Ampalaya“. Use any leafy vegetables in your pantry if you’d like.

  2. Ilagay ang mga tilapia sa taas nito, pagkatapos ang mga luya, sibuyas, bawang, asin, paminta, talong, kamatis, berdeng sili, tubig, at suka. Takpan ang pakuluin ng 10 – 15 na minuto.
  3. Tikman. Haluan ng asukal kung kinakailangan, pagkatapos haluan ng patis. Ilagay ang mga pulang sili at lutuin ng ilang minuto.
