Mango Graham Float
Mango graham float is a layered dessert made by ripe mango pieces, graham crackers dipped in evaporated milk and a thick sweet cream made by all purpose cream and condensed milk in alternating layer. MANGO GRAHAM FLOAT RECIPE
Ingredients:
- 1 kilo ripe mangoes
- 2 packs honey graham crackers
- 2 cans of all purpose cream (chilled)
- 1 can of condensed milk (chilled)
- 1 cup of evaporated milk (chilled)
Directions:
- Chill the all purpose cream, condensed milk and evaporated milk overnight.
- Wash and prepare the ripe mangoes. Slice them near the seed. Use a glass to safely scrape the mangoes. Slice the mangoes thinly and set aside.
- Pour the all purpose cream in a large bowl. Using an electric mixer, whip them well using high speed until smooth and fluffy. Add the condensed milk and continue whipping until well combined.
- Quickly dip each graham crackers into the evaporated milk and then arrange them as a layer. Spread a layer of the whipped cream and then add the sliced mangoes. Continue making alternating layers until you fill the container.
- Let the mango graham float chill in the fridge for at least 6 hours or overnight.
- Serve the mango graham float chilled as a dessert after a heavy meal. Yum!

We Filipinos are the real mango lovers in the world, which is why many Pinoy have been claiming that mango graham float should be added to the list of Pinoy classics. It is not confirmed yet if this is really ours, but we can trace the process of making mango graham float as an adapted version of Italy’s tiramisu.

Mango graham float is my go-to dessert whenever it’s the mango season. You can get real good and real fresh ripe mangoes for a kilo. I usually buy a lot! Either they were eaten fresh or made into a dessert or jams.
Of course we love fresh mangoes but we love them more when they are made into a ref cake together with our favorite graham crackers. Another good news for the mango grahams is that the mangoes won’t spoil for another week.

HOW TO MAKE MANGO GRAHAM FLOAT
Float desserts like the mango graham float is one of the easiest desserts to make. For this recipe, we will be needing the help of an electric mixer to make this easier and faster.
After buying the milk ingredients, make sure to chill (not freeze) them first in the fridge before making the mango graham float the next day. Making the cream for the mango graham float is similar to making an ice cream so we need to keep the ingredients cold.
For the mangoes, get the ripest mangoes you can get. We want sweet and soft mangoes for this recipes, and not sour ones. One hack to get the mangoes out of its skin is to use a glass. Instead of the usual scraping using a spoon, simply pass the brim of the glass over the mango cheek to reveal the mangoes. After this, slice the mangoes however you want. In this recipe, I sliced them thinly.
For the cream, whisk the all purpose cream using an electric mixer until it doubles the size. It might take quite a few minutes to achieve this one. Then, add the condensed milk to make it sweet. Usually the sweetness is already enough after the condensed milk, but if you have a sweet tooth and wants to make it sweeter, you can add more condensed milk or simply sugar.
To make it into mango grahams, simply arrange the graham crackers, cream and sliced mangoes in a container. Dip the grahams first in evaporated milk to make it slighty soft. Not doing this step will make the grahams dry for later. Make sure that the last layer would be the sliced mangoes. Chill the mango graham float in the fridge overnight then consume the next day.

Mango Graham Float Recipe (TAGALOG)
Mga Sangkap:
- 1 kilong hinog na mangga
- 2 packs ng honey graham crackers
- 2 lata ng all purpose cream (pinalamig)
- 1 lata ng condensed milk (pinalamig)
- 1 tasa ng evaporated milk (pinalamig)
Paano Lutuin:
- Palamigin ang all purpose cream, condensed milk at evaporated milk magdamag.
- Hugasan ang mga hinog na mangga. Hiwain ito malapit sa may buto. Gumamit ng baso para kunin ang laman ng mangga. Hiwain nang maninipis ang mga manga at isantabi muna ito pagkatapos.
- Ibuhos ang all purpose cream sa isang malaking bowl. Gamit ang eletric mixer, i-whip ito gamit ang high speed na setting hanggang maging smooth at fluffy. Idagdag ang condensed milk at patuloy na haluin nang mabuti.
- Mabilis na i-dip ang bawat graham crackers sa evaporated milk saka ito iayos sa lalagyan. Gumawa ng isang layer ng whipped cream at sundan ng isang layer ng hiniwang mangga. Ulitin lang ang layers hanggang mapuno ang container.
- Palamigin ang graham float sa ref ng 6 oras o magdamag.
- Enjoyin ang pinalamig na mango graham float bilang dessert pagkatapos ng masarap na kainan. Yum!
