Easy Chop Suey
This Easy Chop Suey Salad or “Vegetable Chop Suey Recipe” is an overload of vegetable goodness. A mix of a number of plants that’ll boost the body’s immunity and health. All you need are onions, garlic, carrots chayote, corn, cauliflower, broccoli, chicharo, cabbage, bell pepper, with the addition of seasonings like salt, pepper, fish sauce, oyster sauce, and proteins such as shrimp, chicken breast, chicken liver and heart, and quail eggs to really pack up the meal.
Easy Chop Suey Recipe :
- 11 pieces shrimp
- ½ cup hot water
- 1 piece chicken breast ( sliced thinly )
- ¼ cup chicken liver and heart
- 1 piece onion ( chopped )
- 2 cloves garlic ( minced )
- 200 ml water
- 1 piece carrot ( sliced )
- 1 piece chayote ( sliced )
- 6 pieces young corn ( sliced )
- Slurry ( 2 tablespoons cornstarch diluted in water )
- 2 tablespoons oyster sauce
- 1 piece cauliflower ( chopped )
- 1 piece broccoli ( chopped )
- 11 pieces chicharo
- 1 cup napa cabbage ( chopped )
- 1 piece red bell pepper ( chopped )
- Pepper to taste
- Fish sauce to taste
- 11 pieces quail eggs
- 4 – 5 tablespoons oil
Steps:
- Prepare the shrimps, remove the head shells, and tails. Set the meat aside. In another bowl, place the shells, head and tails in and pour in ½ cup warm water. Set aside.
- In a pan with a bit of oil, cook the shrimp until it changes in color and set aside. Next, cook the chicken breast for 2 – 3 minutes. Then saute in onions then garlic until fragrant.
- Add in chicken liver and heart until it changes in color. Pour in 200 ml water and the strained shrimp broth, carrots, chayote, and corn. Give it a little mix.
- Add the slurry and mix well. Add in oyster sauce, cauliflower, broccoli, and chicharo. Stir before adding the cabbage, bell pepper, pepper, and fish sauce. Mix then cover for 30 seconds.
- Add back the shrimp, then quail eggs, stir then serve.
What is Chop Suey?
This colorful dish is believed to have been created by Chinese Americans, or rather by immigrants from the Guangdong Province of China in the 1890’s. While there are a lot of accounts of this dish being made in the 19th century, there also stories of this being created during the Qing Dynasty when it was served to the diplomat Li Hongzang visiting the United States. This is said to be invented as a meal that would suit both Chinese and American palates. Though there are also a lot more similar stories to how it was founded. No evidence could be found on how it actually came to be. A Chinese dish but argued to be American. An old fashioned chop suey recipe would include a mix of chicken or other meats like pork, fish, beef, or shrimp, with eggs, celery, cabbage, bean sprouts, mixed with savory sauce thickened with starch served over rice, or in the form of stir-fried noodles or chow mein.
How to make Chop Suey
How to make the Filipino version of the American-Chinese pork chop suey? Starting with preparing the shrimps, removing the heads, shells, and tails which will then be used to make a quick broth by mixing these with hot water. The meat of the shrimp is then sautéed until it changes in color. Take these aside to cook the chicken breasts until it also changes in color. Mix these with aromatics like onions and garlic until it smells fragrant. Then add in the chicken liver and heart which really adds the health benefits like iron, vitamin A, B, and k12, selenium, and zinc, it also adds to the texture. Once these have changed in color, pour in the strained shrimp broth. Then more water, as well as vegetables like carrots, chayote, and corn. Mix these together, letting these simmer for a few minutes just until it’s slightly tender.
Then to make the chop suey sauce, all you need to do is pour in a slurry made of cornstarch and a bit of water. Give this a quick stir before mixing in the oyster sauce, cauliflower, broccoli, and chicharo. These vegetables are separated from the harder ( vegetables that take a longer time to cook ) vegetables as these will only need a few seconds to turn tender. Then add in the cabbage, bell pepper, some pepper, and fish sauce for an added saltiness. Cover for a few seconds or just until the cabbage wilts. Give this a taste and add more oyster sauce or fish sauce if needed. Add back the shrimp and for more protein, add some boiled quail eggs. Mix these up and serve with some rice on the side.

Paano Lutuin :
- Ihanda ang mga hipon, tanggalin ang mga ulo, balat, at buntot. Itabi ang laman. Sa ibang mangkok, ilagay ang mga balat, ulo, at buntot at buhusan ng ½ tasa ng tubig at itabi.
- Sa kawali an may konting mantika, lutuin ang mga hipon hanggang mag iba ng kulay. Itabi. Pagkatapos, lutuin ang dibdib ng manok ng 2 – 3 minuto. Iluto dito ang mga sibuyas at bawang hanggang bumango.
- Ihalo ang atay at puso ng manok at lutuin ang mga hanggang mangbago ang kulay. Ibuhos dito ang 200 ml tubig, sinala na sabaw ng hipon, karot, sayote, at mais. Haluin ng konti.
- Haluan ng slurry. Isama dito ang oyster sauce, cauliflower, broccoli, at chicharo. Ihalo ang repolyo, pulang paminta, paminta, at patis. Takpan ng 30 segundo.
- Ihalo dito ang hipon at itlog ng pugo bago ihanda.
