Ingredients

  • Filling
  • 1 tablespoon oil

  • 1 small carrot ( chopped )

  • 1 onion ( chopped )

  • 2 cans tuna

  • 2 tablespoons mayo

  • 1 cup cheese ( chopped )

  • 1 pack all purpose cream

  • Add salt and pepper to taste if needed

  • White Bread ( sliced )

  • 2 beaten eggs

  • Breadcrumbs

  • Oil for frying

Directions

  • First prepare the filling by straining the tuna. Press the tuna over a mesh strainer to remove most of the excess oil. Set aside.
  • In a pan at medium heat, add oil and saute carrots for a few minutes before adding the onions. Once the onions are soft, add in the drained tuna. Mix well.
  • Then mix in mayo and cheese. Pour in all purpose cream and give it a good stir. Set aside to cool.
  • Prepare the bread slices by flattening it with a rolling pin or the palm of your hands. Fill one half with 2 – 3 tablespoons of the filling. Fold and seal with a fork. Don’t mind the cracks since these will be covered later on.
  • Dip the bread in a bowl of beaten eggs. Then coat with the breadcrumbs. Repeat until the sandwiches are all fully coated.
  • Fill a pan at medium heat with oil. Once it starts bubbling add in the sandwiches. Fry and flip until both sides have browned. Serve while warm!
