Butterfly Chicken with Sprite and Oyster Sauce Recipe

What can be more delicious and uniquely interesting other than this Butterfly Chicken with Sprite and Oyster Sauce Recipe? A sweet, really savory tasting chicken recipe that combines the sweetness of a carbonated drink and the simple savory aromatic sauce base, and a whole chicken. You might think that this flavorful roast is sickly sweet but the outcome is really a tender and juicy chicken that has soaked up the umami simple sauce base.

This whole chicken sprite recipe can be made in just 4 steps. Seasoning the chicken that’s been sliced into a butterfly cut. Meaning that it was sliced halfway then pressed down further to really open up the chicken and get it to flatten. This also helps the chicken cook more evenly. Sear the chicken until both sides have browned with a bit of oil. Take the chicken out to saute the garlic and onions. This awakens the aromatics and brings out the flavor and aroma. Add back the chicken once the onions have softened. Pout in the Sprite or your choice of carbonated soda to help tenderize and keep the chicken juicy, oyster sauce and soy sauce for a nice umami taste, then lemongrass to help remove any foul smells and add a nice subtle minty and sweet lemon taste. The pan or pot is then covered for 30 minutes, flipping the chicken halfway to make sure it’s evenly cooked. Then turn the chicken once more, now at low heat cover the chicken once more and let these simmer together until the sauce has reduced halfway.

Baste the chicken with the remaining sauce to help add more color, flavor, and shine to the chicken. Transfer to a serving plate, garnish with spring onions to add some pop of color and it’s done! It’s a quick and easy dish that’s perfect as a dish to pair with an ice cold drink, with loads of rice, or even as is.

Taste these out and cook the aromatics before adding back the chicken and pouring in all the other ingredients. Bake for 40 – 50 minutes or until the chicken has cooked. If you want more flavor, the chicken marinated in sprite with all the other ingredients can be prepared overnight before searing and baking.
