Banana Rhuma

Banana Rhuma is an elevated twist on the simple and comforting Filipino banana snack ‘turon’. A deliciously addicting dessert made of ripe bananas, lumpia wrappers, and a caramelized coating for an extra sweet crunch. Perfect for parties, holidays, or when craving for something sweet, easy,or something fun to munch on.

Ingredients
  

  • 7 to 8 pieces ripe banana saba bananas
  • Lumpia wrapper
  • Oil for deep frying
  • 1 cup sugar
  • Sesame seeds for garnish

Instructions
 

  • Peel the bananas, slice in vertical quarters. Set aside.
  • Prepare the lumpia wrappers by slicing these into triangles ( in half diagonally ). Place a banana over the end of one wrapper. Roll halfway, fold the edges in and roll till the end the seal. Repeat until all the bananas are wrapped.
  • Fry the bananas in a pot with hot oil until golden brown. Flip as needed. Once golden, take these out. Set aside.
  • In another pan, pour in a bit of the oil used for frying then mix in sugar. Caramelize-let the sugar melt until it turns golden and smooth. Add back the bananas and stir until coated with the sauce.
  • Garnish with sesame seeds before serving.

Banana Rhuma Origin

Banana Rhuma ( “rhum a” ) is a Filipino dessert that traces back to the Philippines’ long history of banana cultivation during the  Spanish colonial influence. Bananas have always been and still is a staple ingredient in Filipino cooking. While this version of the dessert is non-alcoholic. Usually Rhuma is made with a splash or rum or pineapple juice, with cinnamon mixed in the caramel sauce. Rum being a traditional drink made from distilled sugarcane which was introduced during the Spanish era. The home-style snack is often prepared for parties, fiestas, and big to small gatherings, sometimes just as a deliciously easy afternoon snack to enjoy all to yourself.

Like turon but sweeter with a boozy hit. The ease of preparation and low cost also makes it appealing for small food ventures, and are often found in many big to small stalls or restaurants where its can be found as their dessert or snack option. A true Filipino dessert highlighting the country’s creativity and humble ingredients into festive desserts.

  • Ripe bananas – or saba bananas, the riper ones are sweeter and make for a nice soft contrast to the crispy outer layer.

How to make Banana Rhuma

    • Banana Rhuma Calories

    There are about 150 – 200 calories per piece depending on how big it is.

    • Additional ingredients

    While this is the non alcoholic version most of the time there is a splash or 2 – 3 tablespoons of rum in the sauce you add while the sugar is caramelizing, another substitiute is pineapple juice, some add a spinkle of cinnamon or even banana essence.

    • How to keep turon crispy ?
      • Use ripe but still firm bananas. If you use those that are too ripe it can turn soggy even after frying.
      • Seal the wrapper tightly. You can also seal the end of the wrapper with a bit of water. This keeps the banana from coming out and turning too soft.
      • Make sure to fry the bananas only when the oil is hot enough. You can check this by ‘poking’ the hot oil with a chopstick or toothpick. These should be bubbles surrounding the chopstick.
      • Try not to overcrowd the pan to avoid lowering its temperature.
      • Remove the turon and place these on a wire rack to help drain the oil and keep them crispy.

    4. Sa ibang kawali, ibuhos ng konti ang ginamit na mantika pang prito at haluan ng asukal. Lutuin hanggang mag caramelize ito. Ibalik dito ang mga saging at halutin hanggang matakpan ng sarsa.
