Pork Adobo with Quail Eggs – Recipe Easy, Savory, and Filling

Ingredients :
- Pork belly – main ingredient.
- Garlic and Onion – aromatics to make the dish even more fragrant.
- Sprite – the secret ingredient that makes sure the pork stays juicy and that the seasonings really penetrate to the meat.
- Soy sauce – adds color and umami.
- Whole peppercorns – peppery and slightly fruity.
- Bay leaves – gives the dish a deeper flavor.
- Black pepper – to taste
- Quail eggs – boiled and peeled.
- Vinegar – the souring agent, it’s acidity also gives the dish a slight tangy taste.

Pork Adobo with Quail Eggs Recipe
Ingredients :
- 1 kilo pork belly chunks
- 6 cloves garlic ( minced )
- 1 medium onion ( chopped )
- 1 bottle of Sprite ( 295 ml )
- ½ cup soy sauce
- 1 tablespoon whole peppercorns
- 3 to 4 pieces dry bay leaves
- Black pepper to taste
- 20 to 30 pieces of quail eggs ( peeled )
- ⅓ cup vinegar
Steps :
1. In a pan, saute the pork until light brown and slightly charred. Add garlic and onions. Cook until aromatic.

2. Pour in Sprite, soy sauce, peppercorns, bay leaves, black pepper to taste. Mix well. Cover and simmer at medium low heat for 40 – 45 minutes or until pork is tender.

3. Add in vinegar and do not stir for 2 to 3 minutes. Mix and add in the boiled quail eggs. Stir until all the eggs are coated in the sauce. Enjoy !

Where did Adobo come from ?
This national Filipino favorite is considered a cooking method that in indigenous to the Philippines. The way of cooking with vinegar in a soy based sauce has been introduced in the 16th century by the Spanish. It has since then been made to suit Filipino tastes. Mga Sangkap :
- 1 kilo pork belly, hiniwa ng pa-cube
- 6 butil ng bawang ( tinadtad )
- 1 sibuyas ( hiniwa ng maliliit )
- 1 bote ng Sprite ( 295 ml )
- ½ tasa soy sauce
- 1 kutsarang whole peppercorns
- 3 o 4 piraso ng dahon ng laurel
- Paminta panlasa
- 20 o 30 piraso ng itlog ng pugo ( binalatan )
- ⅓ tasa suka
Paano Lutuin :
- Sa kawali, lutuin ang baboy hanggang mag kayumanggi at may pagkasunog. Halua ng bawang at sibuyas. Lutuin hanggang mabango.
- Ibuhos dito ang Sprite, soy sauce, buong paminta, dahon ng laurel, at paminta panlasa. Haluin ng mabuti. Takpan at pakuluin sa mababang init ng 40 – 45 minuto o hanggang lumambot ang baboy.
- Ihalo dito ang suka at wag galawin ng 2 o 3 minuto. Ihalo bago idagdag ang mga itlog ng pugo. Haluin hanggang matakpan ng sarsa ang mga itlog. Ienjoy !
