Ingredients :

  • 500 grams chicken
  • 80 grams sotanghon ( vermicelli noodles )
  • 1 thumb-sized ginger ( sliced )
  • 5 cloves garlic ( chopped )
  • 1 medium onion ( sliced )
  • Pepper to taste
  • 2 tablespoons fish sauce
  • 4 – 5 cups rice water
  • 1 piece chicken broth cube
  • Ampalaya leaves
  • Oil for sauteing

Steps :

1. Prepare the noodles by soaking it with water for at least 10 minutes. Set aside.

2. In a pan with some oil saute ginger, garlic, and onions until aromatic. Then add in the chicken. Cook until it changes in color.

3. Mix in pepper and fish sauce. Add in rice water and a broth cube. Cover and bring to a boil. Add in the softened noodles and simmer for a few minutes until the noodles are fully cooked.

What is Sotanghon ?

Sotanghon or “Vermicelli Noodles” or “Cellophane Noodles” in English is a thin transparent glass like noodles that is usually made of mung bean starch. It looks brittle, stiff, and opaque when uncooked, and once it’s been softened  and fully cooked it turns into a transparent and ( depending on where it’s mixed it will be tinder by the  soup or sauce’s color ) a slightly chewy and springy noodle texture. These are often used in Filipino and Filipino-Chinese dishes. Mga Sangkap :

  • 500 gramo manok
  • 80 gramo sotanghon
  • 1 daliri ng luya ( hiniwa )
  • 5 butil ng bawang ( tinadtad )
  • 1 sibuyas ( hiniwa )
  • Paminta panlasa
  • 2 kutarang patis
  • 4 – 5 tasa ng tubig bigas
  • 1 piraso chicken broth cube
  • Dahon ng ampalaya
  • Mantika panluto

Paano Lutuin :

  1. Ihanda ang mga sotanghon. Ilagay ito sa mangkok na may tubig ng 10 minuto. Itabi.
  2. Sa kawali, lutuin ang luya, bawang at sibuyas hanggang bumango. Haluin dito ang manok. Lutuin hanggang mag iba ng kulay.
  3. Haluan ng paminta at patis. Dagdagan dito ang tubig bigas at broth cube. Takpan at pakuluin. Ihalo ang pinalambot na sotanghon at lutuin ng ilang minuto o hanggang lalong maluto ang sotanghon.
  4. Isama ang dahon ng ampalaya at lutuin ng 2 – 3 minuto. Ilipat sa serving bowl at ienjoy !
