How to make Easy Buttermilk Blueberry Muffins ?
Beautifully browned tops with wonderfully moist and dense blueberry filled bottoms. Muffins are sometimes considered as ‘quick bread’, ‘dense cupcakes’, or ‘mini cakes’ ; with some even using this batter to make an easy buttermilk blueberry cake.
To make this nice treat, mix up all purpose flour, sugar for sweetness, baking powder and baking soda to help puff this muffin up but not too much, and salt to help combine all the flavors together. The flour mixture is set aside while you make the main milk mix of buttermilk that really helps with the moisture, oil to help keep these from being too dry and dense, and eggs to bind everything together. All mixed together before pouring in the fresh blueberries (if you are using frozen blueberries try to strain these while being defrosted to avoid a watery batter), folding the blueberries will not only make a nice blue color and bursts of sweetness and fruitiness in every bite. Pour the batter in each greased muffin pan tin or cupcake pan. Baked for a few minutes. Cooled down to room temperature before taking it off the pan. A great to-go snack or sweet breakfast treat. This goes great with a nice cup of tea, coffee, or iced drink.
