Pepper Soy Chicken

Pepper Soy Chicken is a dry Chicken dish made by cooking fried marinated chicken breast slices in a sauce made by soy sauce, oyster sauce, minced onion, bell pepper, garlic and sugar. With the combination of the savoury soy and crunchy red and green bell peppers and different colour combinations, the soy and pepper chicken is truly an enticing dish to serve especially for kids!

PEPPER SOY CHICKEN RECIPE

Ingredients:

  • 750 grams chicken breast
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 medium onion (chopped)
  • ¼ cup water
  • 1 pc red bell pepper (sliced into thin strips)
  • 1 pc green bell pepper (sliced into thin strips)
  • 4 cloves of garlic (minced)
  • 1 teaspoon sugar
  • 1 tablespoon liquid seasoning
  • 1 tablespoon oyster sauce

Directions:

  1. Wash and prepare the chicken breast. Slice them into thin strips and then place into a bowl. Add the soy sauce and liquid seasoning. Season with black pepper and mix well. Marinate for 10-15 minutes.
  2. Prepare the red and green bell peppers and slice them into thin strips.  Place them in a bowl and set aside.
  3. Heat some oil in a pan. Add the marinated chicken strips. Stir for a few seconds to cook until it changes color. Cover the pan and let it simmer for a few minutes until the liquid evaporates.  Make sure to stir from time to time to cook evenly.
  4. Push the chicken on the side and make a whole at the center. Add the chopped onions and garlic. Saute until aromatic. Stir them altogether for a few minutes.
  5. Sprinkle some sugar to balance the taste. Add the oyster sauce and water. Mix gently to blend all the flavors. Simmer for a few seconds.
  6. Add the red and green bell pepper strips and saute for a few minutes until slightly cooked. Do not overcook to maintain the crunch. Turn the heat off.
  7. Transfer the soy and pepper chicken to a serving plate. Enjoy this on top of a big bowl of hot steaming rice. Yum!

Once you’ve heard of peppers, you might instantly think of those hot red peppers with extreme levels of spicyness. But did you know that there is a type of pepper which is suitable for those who doesnt like too much spice? And surpisingly, this pepper has a Scoville Heat Unit (SHU) of zero!

Bell pepper is a type of pepper which is sweet rather than spicy. They are related to the jalapenos, but think of them as cousins rather than siblings. Tomatoes and breadfruit are some which can also be considered as its cousins. They are fresh, sweet and crunchy!

Another exciting thing about bell peppers is that they come in different colors– green, red and yellow. Most of the time, the red and green ones are available in the markets.

If you would ask me what is my favorite vegetable, then I would probably burst out with “bell peppers!”, screaming at the top of my lungs. I still can’t decide which among the colors is my favorite one, and I try not to be biased and use different colors whenever I can. If you have been an avid fan of my recipes, you already have an idea how much I love bell peppers.

For me, bell peppers are like onions, in a sense that you can safely put it in any dish. I somehow think it should also be an automatic aromatics! Bell peppers do not add too much strong flavors but would definitely highlight the colorful dish and give an extra crunch and freshness. Aside from being an ingredient, you can also use chopped bell peppers as a garnish! That’s an instant 3 colors to your dish!

My love for bell peppers started when my lolo made some picadillo and added a lot of bell peppers. My lolo was the one who taught me that bell peppers are not spicy. He made sure to cook them nicely while maintaining its crunch. It is always me and him who always get our viands first, and we are always nag uunahan among the bell peppers.

I always cook some soy and pepper chicken whenever I have some extra bell peppers at home. This simple dish is just light, fresh and filling to the tummy.

The appetites of some kids are easily boosted once they saw that the dish is colorful. A colorful dish also means a bomb of antioxidants!

HOW TO MAKE Pepper Soy Chicken

Preparing the soy and pepper chicken is super easy and will only take you a few minutes.

Start with mise en place, which means prepare all the ingredients before you start the cooking on the stove. Grab your chicken breast. It is recommended to get the fillet one. If not, remove the breast bones before cutting them. For this recipe, we want to cut the chicken breast into thin strips. You can also cube them if you like. Our goal is for them to be medium in size to cook well and soak all the flavors in the sauce for later.

Before anything else, marinate the chicken first. I used the basic soy sauce and liquid seasoning for this one but feel free to add the seasonings of your choice. Ten to fifteen minutes of marinating is already good to go but better if you can rest them in the fridge overnight.

Once the chicken is ready, stir fry them in a pan lightly coated with oil. Be careful not to overcook them as they might become dry and chewy. Just watch them change into a light brown color. Then, saute the aromatics with the chicken. If you have a small pan, you can transfer the chicken onto a plate, saute the aromatics, and the put the chicken back to the pan.

Add your choice of seasonings. Since the chicken is already marinated, I only added a small amount of oyster sauce and sugar. Adjust the taste depending on your preference.

Lastly, add the red and green bell peppers. If you had been an avid fan of my recipes, you already know how much I love bell peppers. For a more colorful dish, I highly recommend to use both red and green bell peppers. Adding them will surely give a freshness crunch to the dish. More textures, more fun to eat!

Pepper Soy Chicken Recipe in Tagalog

Mga Sangkap:

  • 750 grams pitso ng manok
  • 2 kutsarang toyo
  • 1 kutsarang oyster sauce
  • 1 sibuyas (hiniwa)
  • ¼ tasang tubig
  • 1 piraso red bell pepper (hiniwa ng maninipis)
  • 1 piraso green bell pepper (hiniwa ng maninipis)
  • 4 butil ng bawang (hiniwa ng maliliit)
  • 1 kutsaritang asukal
  • 1 kutsarang liquid seasoning
  • 1 kutsarang oyster sauce

            Paano Lutuin:

  1. Linisin at ihanda ang mga pitso ng manok. Hiwain ang mga ito ng maninipis na strips at ilagay sa isang bowl. Sunod na ilagay ang toyo at liquid seasoning. Timplahan ng paminta at haluin. Imarinate ito ng 10-15 minuto.
  2. Ihanda ang mga bell peppers at hiwain ng maninipis na strips. Ilagay ang mga ito sa isang bowl at isantabi.
  3. Magpainit ng mantika. Ilagay ang mga manok at haluin ng ilang segundo para maluto. Kapag nag iba na ang kulay, takpan ang kawali at hayaan lang ito maluto hanggang matuyo ang sabaw. Haluin ito paminsan minsan para maging pantay ang luto.
  4. Igilid ang mga manok at maggawa ng space sa gitna. Ilagay ang sibuyas at bawang at igisa hanggang maging mabango. Igisa ang mga ito ng ilang minuto kasama ng manok.
  5. Timplahan ito ng konting asukal para mabalanse ang lasa. Sunod na ilagay ang oyster sauce at tubig. Haluin mabuti at pakuluan ng ilang segundo.
  6. Ilagay ang mga bell peppers at igisa ng konti hanggang medyo lumambot. Wag iovercook para medyo crunchy pa rin. Patayin ang apoy.
  7. Ilipat ang soy and pepper chicken sa serving plate. Ihain ito sa ibabaw ng malaking bowl ng mainit na kanin. Enjoy!
