This Chicken Liver Menudo Recipe is not only Yummy, it’s filled with iron, protein, Zinc, and more. This is also the simpler and more affordable version of the traditional menudo, all you need are: chicken liver, soy sauce, calamansi juice, potatoes, carrot, hotdogs, garlic, onions, tomato paste, tomato sauce, oyster sauce, water, chicken broth cube, dried bay leaves, sugar, red and green bell peppers, raisins, with a dash or more of salt and pepper.
Chicken Liver Menudo Recipe :
Ingredients :
- 1 kilo chicken liver
- 1 teaspoon black pepper
- 3 tablespoons soy sauce
- 2 tablespoons calamansi juice
- 2 potatoes ( chopped )
- 1 carrot ( chopped )
- 5 pieces hotdogs ( chopped )
- 5 cloves garlic ( minced )
- 1 medium onion ( chopped )
- 3 tablespoons tomato paste
- 2 tablespoons tomato sauce
- 2 tablespoons oyster sauce
- 1 ½ cup water
- 1 piece chicken broth cube
- Dried bay leaves
- 2 tablespoons sugar
- Green and red bell pepper ( chopped )
- ¼ cup raisins
- Oil
Steps :
1. Season chicken liver with pepper, soy sauce, and calamansi juice. Mix well and marinade for at least 30 minutes.
2. Heat some oil in a pan. Saute potatoes until lightly browned. Take these out then saute carrots until lightly browned. Set this aside.
3. Saute hotdogs until lightly browned then set aside. Place in chicken liver, saute until it changes in color. Then take it out of the pan.
4. In the same pan, add more oil and saute garlic then onions until aromatic. Then mix in tomato paste. After, pour in tomato sauce, pepper to taste, oyster sauce and mix well.
5. Add back the chicken liver, potatoes, carrots, and hotdogs. Give it a good mix. Pour in water, chicken broth cube, and dried bay leaves.
6. Cover and simmer for 5 to 8 minutes or until the vegetables are tender. Mix in sugar, bell peppers, and raisins. Cook for another 2 minutes. Serve and enjoy !

Paano Lutuin :
- Timplahan ng paminta, soy sauce, at calamansi juice ang atay ng manok. Haluin ng mabuti ang imarinade ng 30 minuto o higit pa.
- Maginit ng mantika sa kawali. Lutuin ang mga patatas hanggang mag kayumanggi ng konti. Tanggalin sa kawali at lutuin ang mga karot hanggang mag kayumanggi ng konti. Itabi.
- Igisa ang mga hotdogs hanggang mag kayumanggi at itabi. Iluto ang atay ng manok at lutuin hanggang magiba ito ng kulay. Tanggalin sa kawali.
- Sa parehong kawali, dagdagan ng konti pang mantika at igisa ang bawang at mga sibuyas hanggang bumango. Haluan ng tomato paste. Pagkatapos haluan ng tomato sauce, paminta, at oyster sauce.
- Ibalik sa kawali ang nilutong atay, patatas, karot, at hotdogs. Haluin. Buhusan ng tubig, chicken broth cube, at mga dahon ng laurel.
- Takpan at pakuluan ng 5 – 8 minuto o hanggang lumambot ang mga gulay. Haluan ng asukal, pula at berdeng paminta, at pasas. Lutuin ng 2 pang minuto. Ihanda at ienjoy !
