What is a Salted Egg?

Salted egg is a preserved delicacy typically made by soaking a duck egg or chicken egg in a salted brine or salted mud brine mixture for several weeks ( around 20 to 45 days, depending on the household or area it might even take a month or so ). This technique imparts the salty briny flavor to raw egg, makes the yolk slightly oil, and actually cooks to solidify the egg. The egg white turns a bit dull in color with an almost gelatin consistency, it also has a sharp salty taste. While the egg yolk turns a bit more gritty and golden orange in color, some even turn a reddish orange the longer it’s been brined.

Often used in East Asian countries to make dishes like; mooncakes, custard egg buns, stir-fry like salted chicken wings or salted egg tofu, sprinkled over traditional dishes as a topper, over noodles, even added in some savory pastries, desserts and more. This interesting

In the Philippines, “Salted Eggs” are called “Itlog na Maalat” or “Itlog na Pula” ( which literally translates to ‘Red Eggs’ ). The duck egg shells are often dyed a deep vibrant red-purple, brined for 4 to 5 weeks depending on the temperature, eaten as is with a side of slated tomatoes and rice, added into salads, as a filling for siopao, or as a topping over bibingka or puto ( different traditional Filipino rice cakes ). You can find these often made by home by some hourselds or a the dry or wet market, and even in some grocery stores.

Questions

  • Different ways of cooking

Want to make the dish a bit more healthy? Skip the seasoning and frying. Steam the chopped tofu instead to make a “Steam Tofu with Salted Egg Recipe”. Though because it is not fried you might notice that the tofu will easily crumble, so toss these around gently. You can also replace hard tofu with soft tofu ( or silken tofu ) to really skip the frying or steaming as these are already fully cooked and can be consumed as is. Prepare the sauce add in the silken or soft tofu and you’re done!

  • What to Pair this with ?

Pair this dish with freshly cooked white rice, garlic rice, roasted or baked potatoes, even fries on the side. If you really want a quick asian twist, toss some softened rice noodles into the sauce while you toss in the tofu to let the noodles sip up all that deliciously eggy goodness.
