What does Sinarsahang mean ?
While this dish is all about “How to cook Atay ng Manok“, what exactly does “Sinarsahang” mean? Did it come from the Philippines? Who started it? The dish might be confused with ‘Sinarsa’ which is actually a specialty dish from Romblon, Philippines. It’s quite different from this recipe. Sinarsa is a dish made of ‘ylang’ crayfish or shrimps, mixed with coconut meat with or without sili to pack some spice, then wrapped in banana leaves ready to be steamed. This flavorful dish was made to showcase the preparation method and its fresh ingredients. Served as is like a snack, while some pair it with a side of rice to turn it into a full meal.
But for many ‘Sinarsahang’ is a style of cooking that mixes meat, usually pork or chicken braised in a soy and tomato based sauce. This method or style of cooking is called ‘Sinarsahan’ from the term ‘Sarsa’ which means ‘sauce’ in Filipino. The dish given its name indicates that it’s been simmered in sauce until it’s cooked and the sauce itself looks thicke enough that it clings into the meat well. Sinarsahang dishes usually have a distinctive tangy and slightly sour taste from the tomatoes. A really savory meal that’s perfect to make on the weekends or as a weekday dinner since it’s just as easy to make. Just marinade, sear, simmer and enjoy !
