The idea started when an New York establishment in 1960’s Buffalo called the ‘Anchor Bar’ was preparing for a late night snack when one of the owners cooked from leftover wings drenched in hot sauce. They were so delicious they added it into the menu and served it with a side of celery blue cheese sauce and were then called ‘Buffalo wings’. the bar used this popularity and promoted the concept of chicken wings as a snack to many establishments. This caught on locally then globally, and by 1990, they were so popular it began appearing on other restaurant menus around the world overnight.
May have said that the timing of the chicken wing’s popularity may have been because eating a ‘low fat’ diet was on trend during the 1980’s. it made the higher fat parts like the chicken wings less desirable but cheaper. This inexpensive part made it a great dish to have a good rate of return as well as pairing the hot and spicy chicken wings with beer made more customers to order more beer to reduce the heat in their mouths. This then after became a common dish to eat at beers, pair with drinks, and watch with.
