Chicken Enchiladas

This simple and easy Chicken Enchiladas recipe is great for those days when you just need a quick appetizer or dish to serve guests. All you need are precooked or store bought roasted chicken, chili peppers, and cheddar cheese that will wrapped in a tortilla, topped with sour cream more cheeses and the Enchilada sauce made of all purpose flour, chili powder, oregano, cumin, garlic powder, some salt and pepper, diluted with chicken broth. Chicken Enchiladas Recipe :

Ingredients

  • 2 cups roasted chicken ( shredded )
  • 6 pieces long chili peppers ( chopped )
  • 2 cups shredded cheddar cheese
  • 1 pack tortilla
  • Sour cream
  • Mozzarella
  • Chopped Basil for garnishing

Enchilada Sauce

  • Oil
  • 2 tablespoons all purpose flour
  • 4 tablespoons chili powder
  • 1 tablespoon dry oregano
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 2 cups chicken broth

Steps:

  1. In a pot, heat some oil, add in flour, chili powder, oregano, cumin, garlic powder, salt and pepper. Mix until it turns into a paste. Slowly pour in the chicken broth while stirring. Mix until it thickens. Set aside.
  2. In a bowl; place in shredded chicken and ¼ to ⅓ cup enchilada sauce, some chili peppers, and some cheese. Place a portion of these onto a tortilla. Roll into a log.
  3. Place these in a casserole or baking dish seam side down. Cover with sour cream. Pour remaining enchilada sauce. Top with remaining chilies and cheddar cheese.
  4. Top with as much mozzarella as you like. Bake in a 170°C or 350°F preheated oven for 20 minutes. Garnish with basil before serving.

Mga Sangkap :

  • 2 tasa inihaw na manok ( hinimay-himay )

  1. Sa palayok, uminit ng mantika at haluan ng harina, chili powder, oregano, cumin, garlic powder, asin at paminta. Haluin hanggang magmukhang pandikit. Dahan dahang ibuhos ang chicken broth habang hinahalo. Haluin hanggang kumapal at itabi.
  2. Sa mangkok, haluin ang hinimay na manok at ¼ o ⅓ tasa ng enchilada sarsa, haluan din ng konting sili at kso. Ilagay ang 1 – 2 kutsara nito sa tortilla. Irolyo at itabi.
  3. Ilugar ang mga ito sa casserole o baking dish. Takpan ng sour cream. Iagyan din ng natitirang enchilada ng sarsa. Bago takpan ng mga natirang sili at keso.
  4. Lagyan ng mozzarella kung gusto. Ibake ng 170°C o 350°F na pinainit na oben, lutuin ng 20 minuto. Dekorasyonan ng basil bago ihanda.
