How to make this Savory Cassava Patty Recipe?

This fried grated cassava recipe is so easy to do, you might just add this into your weekly rotation of afternoon snacks. To make this deliciously delightful snack all you need to do is grate the cassava. You can grate it as big or small as you like. What’s important is the next step. Squeeze out as much of the juices as you can. You can do these with your hands, pressing the cassava over a strainer, or through a cheesecloth. Mix these thoroughly squeezed cassava with some canned corned beef, though you can also choose to use any grounded meat or chopped up cured meats ( for example: luncheon meat, spam, hot dogs or even sausages). Then mix in cornstarch and all purpose flour to bind everything together and help these crisp up better. Then for extra flavor and binding mix in eggs, minced onion, garlic, salt, and pepper. Mix until there are no dry spots left and it looks really thick and sticky.

In a shallow pan at medium heat, add some oil. You’ll know if it’s hot enough once you see small bubbles form. Another way of making sure if it’s hot enough is by dropping a little bit of the batter or poking the oil with a chopstick or toothpick. These should start bubbling as well. Scoop a spoonful or more and flatten the cassava batter to look more like patties. Once one side turns brown, flip to cook the other side. Once both sides have browned and are slightly crisp, take these out and place on a strainer or kitchen towel to remove excess oils. Draining these oils also ensures that it can stay crisp longer. Serve these up with a side of your sauce of choice like ketchup, garlic mayo, sriracha, ranch, or any other sauces.
