Tortang Sayote
Tortang sayote or sayote omelette is made with and egg batter made off sayote, egg, onion, garlic, carrot, all purpose flour, malungay leaves, green onions and seasoned with liquid seasoning, salt and pepper. Basically it is an egg omelette that have sayote and vegetables as its main ingredient. This delicious and savoury dish will make any one enjoy their vegetables.

TORTANG SAYOTE: Easy and Affordable Recipe
Omelette is one of my comfort dishes whenever I feel that I don’t like what’s on our table. I also make omelette just for fun, having it as a side dish to my meals. I am always experimenting with it and is trying to make my omelette fancy. I have tried adding different ingredients on it and enjoy the different flavors as they combine in my mouth.
Putting vegetables in my omelette is also one of my techniques to teach my niece on eating her vegetables. She is really not a fan of vegetables but eats the vegetable omelettes I make. So far, I have introduced a lot of vegetables to her through my vegetable omelette.
I always put my sayote whenever I cook a soupy dish. Its mushiness when cooked adds a different texture to the soup but its slightly bland taste do not over power the other ingredients of the soup. That’s what I really like about sayote. It was this one time that I was about to cook an omelette when I found out that I ran out of vegetables. I only had sayote, onion, garlic and tomatoes left on my food counter.
I decided to give sayote a try on being in an omelette. I was sort of hesitant at first since I never just sautéed my sayote before. I was nervous that it won’t cook well. But then I gave it a try and to my surprise, the sayote was cooked during the sautéing process. Since then, I experimented on using sayote as the main ingredient for my sayote omelette or tortang sayote. I tried using different vegetables and looked on what will compliment sayote the most. At the end of this article, you will see what I think are the best vegetables to be added in your tortang sayote based on my preference. You could always try tortang sayote with any other vegetable that suits you.
HOW TO MAKE TORTANG SAYOTE
The Veggies
The vegetables will give the variety of flavors to our tortang sayote. The main vegetable is sayote and you can literally any other vegetable you like. In this recipe, the other vegetables which will be added are: red onions, garlic, carrot strips, malunggay leaves, leeks or green onions. The sayote has a relatively subtle flavor compared to the other vegetables but the mushy texture of the sayote when cooked will give the overall texture of the dish. The goal of adding vegetable varieties in the torta is to add different flavors and to make the torta more appealing and appetizing with the presence of different colors.
First, prepare the sayote by peeling and slicing into small pieces. Do not forget to remove the seed. Wash and drain after slicing. Chop all the other vegetables into small pieces or strips. Saute the vegetables starting with the chopped red onions followed by the garlic. Cook the onion until translucent. Add in the garlic and cook until light brown. Add the sayote and carrot strips. Continue sautéing the vegetables until they are half-cooked. Add liquid seasoning if preferred. Season the sautéed vegetables with salt and pepper. Set aside and let it cool down for a bit.
Torta
“Torta” is a term used for flavoured omelette wherein as certain ingredient is highlighted and can come from a wide array of choices (example: meat and vegetables). The highlighted ingredient is greater in quantity than the rest of the components of the torta. In this dish, we will make a vegetable omelette wherein the highlighted ingredient is the sayote.
The reason why the vegetables were cooled down before continuing with the torta is that the eggs may cook from the heat brought about by the cooked vegetables. When the sautéed vegetables are cool enough, add the eggs, malunggay leaves and the green onions. You may add some all-purpose flour if you want the texture of the resulting torta to be similar to a pancake. If you want one large tortang sayote, grab a large frying pan and lay the mixture on the pan. In my case, I prefer to make small pieces of tortang sayote in a pancake pan. Continue frying until both the vegetables and the eggs are cooked. Flip the other side to ensure that both sides are done.
Serve the tortang sayote or sayote omelette in a serving dish while it is still hot. It can be enjoyed as a snack or with rice. You could also experiment it with different dips and sauces.
