Tortang Sayote: Easy Filipino Sayote Omelette with Vegetables

1 medium-sized sayote peeled, seeded, and sliced into thin strips 3 small eggs 1 medium-sized onion chopped 2 cloves garlic minced Carrot strips optional 1/4 cup all-purpose flour optional Malunggay leaves optional Leeks or green onions optional Salt and pepper to taste Liquid seasoning optional Cooking oil for sautéing and frying
Wash and peel the sayote. Cut it in half, remove the seed, and slice the flesh into thin strips. Wash and drain.
Heat a little oil in a pan over medium heat. Sauté the chopped onion until translucent.
Add the minced garlic and sauté until lightly browned and fragrant.
Add the sayote and optional carrot strips. Season with salt, pepper, and liquid seasoning, if desired.
Sauté the vegetables until about half-cooked. Transfer to a bowl and allow them to cool slightly.
Add the eggs, optional all-purpose flour, malunggay leaves, and green onions to the cooled vegetables. Mix thoroughly.
Heat a little oil in a frying pan over medium-low heat.
Scoop some of the mixture into the pan and spread it evenly into a round omelette.
Cook until the bottom is set and lightly golden. Carefully flip and cook the other side until the eggs and vegetables are completely cooked.
Repeat with the remaining mixture.
Transfer to a serving plate and serve hot with steamed rice and your favorite dipping sauce.
Slice the sayote thinly and evenly so it cooks properly.
Remove the sayote seed before slicing.
Allow the sautéed vegetables to cool slightly before adding the eggs to prevent the eggs from partially cooking in the bowl.
All-purpose flour is optional but gives the omelette a firmer, pancake-like texture.
Carrots, malunggay leaves, and green onions are optional but add color, flavor, and extra nutrients.
Cook the omelette over medium-low heat to prevent the outside from browning too quickly while the inside remains uncooked.
Make small omelettes if you want portions that are easier to flip.
Serve with steamed rice, ketchup, or soy sauce with calamansi.
Leftovers can be refrigerated in an airtight container for 2–3 days and reheated gently before serving.
