Pompano Steak
Ingredients
- 1 kilo Pompano steak
- Ginger sliced
- 5 cloves garlic minced
- 1 medium onion sliced
- ¼ cup calamansi juice
- ¼ cup soy sauce
- 1 tablespoon oyster sauce
- 1 cup water
- Pepper to taste
- ½ tablespoon sugar
- Slurry 1 tablespoon cornstarch + 2 tablespoons water
- White onions and spring onions for garnish
- Oil for frying
Instructions
- Prepare the cleaned pompano and slice shallow slits on each side. Season with salt and pepper. Fry in a shallow pan with hot oil until golden. Flip if needed. Set aside.
- In another pan, heat up some oil and saute some ginger, garlic, and onions until aromatic. Pour in calamansi juice, soy sauce, and oyster sauce. Mix well.
- Once simmering, pour in water, pepper and sugar. Cook for a few minutes until simmering again. Add in slurry. Mix until it thickens.
- Place in the fried fishes. Baste with the sauce. Garnish with onion rings and spring onions. Enjoy !

- Pag kumukulo na, haluan ng tubig, paminta, at asukal. Lutuin ng ilang minto hanggang klumulo ulit. Lagyan ng slurry, haluan hanggang kumapal.
