Pompano Steak

Ingredients
  

  • 1 kilo Pompano steak
  • Ginger sliced
  • 5 cloves garlic minced
  • 1 medium onion sliced
  • ¼ cup calamansi juice
  • ¼ cup soy sauce
  • 1 tablespoon oyster sauce
  • 1 cup water
  • Pepper to taste
  • ½ tablespoon sugar
  • Slurry 1 tablespoon cornstarch + 2 tablespoons water
  • White onions and spring onions for garnish
  • Oil for frying

Instructions
 

  • Prepare the cleaned pompano and slice shallow slits on each side. Season with salt and pepper. Fry in a shallow pan with hot oil until golden. Flip if needed. Set aside.
  • In another pan, heat up some oil and saute some ginger, garlic, and onions until aromatic. Pour in calamansi juice, soy sauce, and oyster sauce. Mix well.
  • Once simmering, pour in water, pepper and sugar. Cook for a few minutes until simmering again. Add in slurry. Mix until it thickens.
  • Place in the fried fishes. Baste with the sauce. Garnish with onion rings and spring onions. Enjoy !
