Prepare the cleaned pompano and slice shallow slits on each side. Season with salt and pepper. Fry in a shallow pan with hot oil until golden. Flip if needed. Set aside.
In another pan, heat up some oil and saute some ginger, garlic, and onions until aromatic. Pour in calamansi juice, soy sauce, and oyster sauce. Mix well.
Once simmering, pour in water, pepper and sugar. Cook for a few minutes until simmering again. Add in slurry. Mix until it thickens.
Place in the fried fishes. Baste with the sauce. Garnish with onion rings and spring onions. Enjoy !
