* Can you use egg roll wrappers for lumpia? Yes you can. Though these will not be as authentic as the traditional thin limapia wrappers. Egg wrappers are thicker and will bubble as it fries which gives it a different texture compared to the smooth lumpia wrappers.

  • Make sure to only place in the fillings, avoid adding the sauce or any of the liquids as much as possible. You can also strain the fillings to make it easier to handle.
  • Seal lightly and avoid overfilling the wrapper. Some actually double wrap the fillings for a stronger barrier.
  • The best way would be to freeze the lumpia beforehand. Since you want the lumpia ingredients / fillings to be solid. Also do not thaw frozen lumpia when you choose to cook these.
  • Make sure the oil is hot enough before adding the lumpias in. To know these are hot enough you poke the oil with a wooden toothpick or chopstick and these should bubble a lot. You can also use a thermometer, which should say it’s around 175°C or 350°F.
  • Fry in small batches, try not to overcrowd the pan since the temperature can lower right away and turn the lumpias soggy.
  • How long does it take to deep fry frozen lumpia? Fry and flip just until these look golden on all sides. Strain over a wire rack or strainer. 
  • To make these extra crisp. Once slightly cooled, fry once more until they turn a deeper brown color. Strain once again for a few minutes before serving these while still warm.

How to Bake Lumpia ?
