What is Tulingan ? Tulingan is a saltwater fish some may know as “Tuna Mackerel” or “ Bullet Tuna”. This bluish-black tropical fish is a popular choice due to being affordable and easy to cook. When used in Filipino cuisine, you’ll often see these fried as is or with a bit of salt and ginger, added into soups and stews like sinigang, simmered into sauces like paksiw, or used as a fish substitute in many other dishes as it is meaty, firm in texture, and budget friendly but still healthy as just as tasty.

Sarciadong Tulingan Recipe
Ingredients :
- 1 kilo tulingan
- 5 cloves garlic ( minced )
- 1 medium onion ( chopped )
- 6 pieces tomatoes
- 1 & ½ cup water
- Salt to taste
- Black pepper to taste
- 1 teaspoon sugar
- 1 large egg ( beaten )
- Oil for frying
Steps :
1. Prepare the tulingan by seasoning these with salt on both sides. Set aside.
2. In a pan with a good amount of oil. Fry the fish in batches. Flip to cook evenly. Once both sides are golden, set aside. Repeat for the other fishes.
3. In another pan, heat some oil and saute garlic until aromatic. Add in onion and cook until soft. Mix in the tomatoes and saute until these are soft enough to crush.
4. Mash the tomatoes a bit while mixing. Pour in the water and add in salt and pepper to taste. Add in sugar if it tastes too sour or salty. Mix well.
5. Bring to a boil. Drizzle in the egg and give it a good stir. Place in the fried fish and simmer for 1 minute to let the dishes absorb the sauce.

Mga Sangkap :
- 1 kilo tulingan
- 5 butil ng bawang ( tinadtad )
- 1 sibuyas ( hiniwa ng maliliit )
- 6 piraso ng kamatis
- 1 at ½ tasa ng tubig
- Asin pang lasa
- Paminta pang lasa
- 1 kutsarita ng asukal
- 1 malaking itlog ( hinalo )
- Mantika pang prito
Paano Lutuin :
- Ihanda ang mga tulingan, timplahan ng asin, Siguraduhin maasinan ang bawat gilid. Itabi.
- Sa kawali na may mantika. Iprito ang mga isda ( wag pagsabayin ang lahat ng isda ). Pag baliktarin para maluto ng maayos. Pag golden na at itabi. Ulitin para sa ibang isda.
- Sa ibang kawali, maginit ng konting mantika a lutuin ang mga bawang hanggang mabango. Ipagsama dito ang sibuyas at lutuin hanggang lumambot. Haluan ng kamatis hanggang lumambot at mabilis i-crush.
- I-mash ang mga kamatis habang hinahalo. Ibuhos dito ang tubig at haluan ng asin at paminta. Haluan ng asukal kung masyadong maasin o maalat.
- Pakuluin. I-drizzle dito ang binati na itlog at haluin ng mabuti. Ilagay ang mga pritong isda at pakuluan ng sama-sama ng 1 minuto para masipsip nito ang sarsa.
