What is Soy Sauce
Soy sauce might be one of the oldest condiments invented. As history accounts, the first ever soy sauce was made back in 500 B.C. This means that soy sauce was there even before Christ! People back then are trying to preserve meat, fruits and veggies, and that’s when they discovered fermenting soy beans which turns into what we know as soy sauce now.
Soy sauce came into the Philippines during the barter trade era with the Chinese people. As you might notice, your siomai, dumplings, pancit and lumpia and all other Chinese food items were all either dipped or flavored with soy sauce.
Now, our country learned how to prepare our own soy sauce using local materials. Soy sauce together with vinegar, is not just the most versatile condiment but also one of the most economical. There’s no stopping with adding soy sauce in your daily dishes!
The two versions of the soy sauce you can find in the market is the light and dark soy sauce. Ironically, the dark soy sauce has less sodium to it! But still, remember that soy sauce is still full of sodium so of course, hinay-hinay pa rin!
Soy Pepper Pork
As I mentioned above, soy sauce is one of the most economical condiments. During petsa de peligro, soy sauce become not just a condiment but an ulam already. I can still remember back in the days where we are really short with our food budget. My mom, who usually prepares fancy dishes, made me some egg fried rice drizzled with just the right amount of soy sauce. It made the fried rice amazingly tasty with just the right amount of saltiness.
What I love about having soy sauce as one of my main condiments is that the soy sauce has extra flavor aside from just being salty. Unlike other fermented products which has a very strong flavor and aroma, the soy sauce has a mellow flavor to it, just enough to darken and make any dish much flavorful.
From our old soy sauce egg fried rice, one of my favorite economical dishes now is the soy pepper pork. I love this dish as it only requires a few ingredients, with the soy sauce providing all the exemplary flavors the dish needs. This dish is the perfect dish to make if you have limited ingredients, especially the seasonings. What are you waiting for? Grab your pan and let the soy sauce do its magic!

How to Cook Soy Pepper Pork
Making some soy pepper pork is one among the easiest pork dishes you can make at home. The main goal of this dish it to have a medley of ingredients sauteed together which will be binded with a savoury soy sauce flavor.
Start with choosing your pork. I choose lean cuts of pork for this one but you can always use other cuts you like. We’d like to marinate the pork first in a mixture of soy sauce, black pepper and liquid seasoning. As simple as that. While I always encourage you to add other seasonings you like, keeping the marinade simple will highlight the soy sauce flavor which is what we want to achieve.
After marinating, let’s start cooking. Saute your aromatics and then the pork until a little brown. A little liquid will come out of the pork as you cook, so just continue cooking until the liquid dries up and the pork is lightly seared.
The next part is adding extra flavors just to balance everything out. I added a little sugar and extra oyster sauce (you can use soy sauce too). Lightly mix this before adding a lot of water, just enough to allow the pork strips to fully cook and become tender. It will take around 10 minutes to finish this procedure.
Once the broth has almost dried out, do a taste test and then add water and repeat the simmer once you are not yet satisfied with the tenderness of the pork. Once the broth has been reduced to a thick sauce, the dish is now ready!
Grab a big bowl of hot steaming rice and top it with these sweet and salty chunks of pork. I like sprinkling some chopped spring onions and sesame seeds to it. Yum!
